Cherry Watermelon Granita
Have you ever eaten something that you haven’t had in a while and wonder, why did I ever stop eating this?
Well, I just had that moment the other day with watermelon.
It was a pretty amazing moment actually, in which watermelon juice was dripping down my mouth and I inhaled like 4 whole pizza size pieces of watermelon without blinking an eye!
Guess I missed it. 🙂
I don’t always buy it because sometimes it can be expensive but also {like pineapple} it can be a beast to cut up and I’m just lazy so I don’t buy it.
Which is why I love this recipe! No cutting needed… okay maybe a little but its just like 2 or 3 cuts then throw it into the blender and viola. Heaven!

Its basically like the blogger version of the show Chopped where we pick mystery box ingredients for the month and have to come up with a dish based off of those ingredients.
Some of the previous Mystery Dish recipes are Raspberry Peach Cobbler with a Oatmeal Pecan Crumble, and Baked Coconut Shrimp with Thai Ginger Chili Sauce.
This month Sarah from The Pajama Chef is our host, the ingredients she chose for this month were: coffee (grounds or brewed), sour cream, farro, almonds, cherries, watermelon, cantaloupe, jicama, cucumber, tomatoes, infused or flavored olive oil, fresh herbs (any kind), cornmeal, and hot peppers (any kind). This month we had to use at least 3 of the ingredients given.
Its summer in Texas which means it is dreadfully miserable and hot 24/7 …. so I decided to go with something that would cool us down during these hot summer nights and made a Cherry Watermelon Granita infused with mint.
Granita is a semi-frozen dessert made with sweetener of some sort and various other flavors, just throw it in a blender till it turns to liquid put it in the freezer and use a fork to scrap at the frozen mixture to create almost like a slushy or shaved ice texture. It is light, refreshing, super versatile, and crazy easy to make.
Todays Mystery Dish is made with 4-ingredients.. yup… count um!
Honey, Watermelon, Cherries {YUM.. and it gives the granita a gorgeous color}, and fresh Mint. It is everything you want in a dessert and then some. I served this plain, but you could definitely eat it with a little whip cream on top if you’d like. I hope you enjoy this sweet treat and it cools you down this summer!

Description
This Cherry Watermelon Granita infused with mint is a light, simple, and fresh dessert recipe. This soothing snack is absolutely perfect for those sweltering summer days!
Ingredients
- 4 1/2 cups of watermelon
- 1 cup of cherries, seeds removed
- 1 tablespoon of fresh mint
- 1/2 cup of honey
Instructions
- Place all ingredients in a blender, blend until mixture has a liquid type consistency.
- Place granita mixture in a 13×9″ glass dish.
- Cover with plastic wrap and place in the freezer fro 3 hours.
- Using a fork, scrap the top layer until you get to the soft part.
- Place granita back in freezer covered to let sit for another 3 hours.
- Repeat fork scraping process one more time before serving.
- Enjoy!
