I was going to wow your eyes and taste buds today with a dynamite Asian Chicken Salad I just made but… its Monday … and we need to start out the week with a sweet bang. Because….
1. Life is just better when you have sweets.
2. I am celebrating a sweet {no pun intended} blog friends 2 Year Blog Anniversary today … and she blogs at Life, Love, & Sugar. So its only fitting that I post a dessert recipe today! I honor of her of course!
I first met Lindsay through a link party. What is a link party? Well, its this online party us bloggers do to get our content out on the world wide web but its also a great place to find friends.
I was looking through all the recipes linked up at this party and started drooling over a dessert recipe that Lindsay had posted! It of course had dripping chocolate down the side of a moist cake and it is all I could do to not eat the screen. I clicked on the link and Lindsays sweet face popped up!
I then had the chance to meet her in person at the Blogher Food Conference in Miami. I ended up hanging out with Lindsay quite a bit and got to know her even better. She has such a servants heart, she drove us (about 8-9 of us in total) everywhere around in Miami.
She truly wants to know who you are, not just surface level stuff but really cares how you are doing.
She will go out of her way to make you feel included, there were several times over the weekend in Miami that Lindsay would text to see where I was or what I was doing.
Meeting such a sweet person to call my friend has been awesome, and I love that it was through blogging! 🙂

Now, onto the food! Since it is still peach season and thus far I have only given you one peach recipe.. I know I’m such a slacker … I knew I needed to give you another one before the season ends. One of the recipes you asked for on facebook was for grilled fruit.
Ladies and gentleman… today I present to you the easiest dessert you will ever eat! Grilled Peaches with a Maple Honey Mascarpone Cheese then topped with raw sliced almonds!
So a couple months ago I tried mascarpone cheese for the first time and have been addicted ever since! Its an Italian cheese and seriously the creamiest thing you will ever eat. It can be used for savory foods, to cream up a sauce, or in a dessert to add a little bang.
My absolute favorite way to eat this delicious creamy cheese is to mix it up with maple, honey, and vanilla extract. It adds just the right amount of sweetness but doesn’t overwhelm your palate with sugar. Seriously perfect!
Compliment it with warm grilled peaches and you have yourself something you can sit down with and savor every last bite… guilt free I might add!!

Description
These fresh Grilled Peaches with Maple Honey Mascarpone Cheese are a sweet healthy dessert that will leave you feeling satisfied and guilt free!
Ingredients
- 6 peaches, halved
- canola oil
- 1/2 cup almond slices {as garnish}
Maple Honey Mascarpone Cheese:
- 8 oz. mascarpone cheese
- 1 tablespoon maple syrup
- 1 tablespoon honey
- 1 teaspoon vanilla extract
Instructions
- In a small bowl, mix together mascarpone, maple syrup, honey, and vanilla extract until combined. Set aside.
- Heat grill to medium high heat or 400 degrees..
- Brush peaches with canola oil.
- Place flesh side of peaches on grill.
- Grill for 2-3 minutes on flesh side. Remove from grill.
- Serve peaches with a tablespoon of mascarpone and a tablespoon of almond slices.
