Description

5 Easy Healthy Avocado Toast Recipes that are perfect for breakfast, lunch and dinner! How to make sweet potato toast in the oven in just 15 minutes and create the most epic avocado toasts everyone will love! 


Ingredients

Scale
  • 1 large round sweet potato, sliced lengthwise into 1/4” to 1/3″ slices
  • 1 teaspoon avocado oil
  • 1 avocado, mashed

1. Pico Avocado Toast:

  • 1/2 cup diced cherry tomato
  • 1 tablespoon diced red onion
  • 1 teaspoon fresh chopped cilantro
  • 1 teaspoon lime juice
  • salt to taste

2. Everything Bagel Avocado Toast:

  • 1 tablespoon everything bagel seasoning

3. Fruity Avocado Toast:

  • 1/2 cup blueberries
  • 4 strawberries, sliced
  • 1 teaspoon chia seeds

4. Soft Boiled Egg Avocado Toast:

  • 2 soft boiled eggs (see below for directions)

5. Bacon Avocado Toast:

  • 2 strips of bacon, cooked and diced

Instructions

  1. Preheat oven to 425°F.
  2. Brush both sides of sweet potato slices with avocado oil.
  3. Place on a parchment paper lined baking sheet.
  4. Bake for 5 minutes. Flip the sweet potato slices and bake the other side for 5 minutes.
  5. Remove from oven and rest.
  6. In the meantime, add avocado to a small bowl and mash.
  7. Top each slice of sweet potato with a tablespoon of mashed avocado and one of the below toppings.

Pico Avocado Toast:

  1. To a small bowl add, cherry tomato, red onion, cilantro, lime juice and salt. Toss to mix.
  2. Top each avocado toast with 2 teaspoons of pico mixture.
  3. Serve.

Everything Bagel Avocado Toast:

  1. Sprinkle each avocado toast with everything bagel seasoning.
  2. Serve.

Fruity Avocado Toast:

  1. Top each Avocado Toast with 4-5 blueberries, 1 sliced strawberry, and a sprinkle of chia seeds.
  2. Serve.

Soft Boiled Egg Avocado Toast:

  1. Fill a small saucepan with 1″ of water.
  2. Bring to a boil. Add 2 eggs to the pot and cover.
  3. Boil for 6 minutes and immediately add to an ice water bath to cool.
  4. Peel, slice in half and place on top of avocado toast.
  5. Serve.

Bacon Avocado Toast:

  1. Crumble cooked bacon and sprinkle over avocado toast.
  2. Serve.
