
Gluten Free Veggie Turkey Rollups
So… true confessions?
I’m kinda a creature of habit. I like my routine and that’s what I like. Recently I took one of those DISC assessment tests, I tested as a D and C. As I read the definition of what these people “do,” one of the things it said was, they rarely like change or have a hard time adjusting to it. TRUTH!
It’s funny that I ended up being a food blogger which is a profession that forces me to make new things multiple times a week. Change is mandatory or I won’t have anything to post.
The one thing that remains the same is lunch. I always buy lunch meat. One because it’s a great source of quick protein and two because my little man LOVES it! In fact, the highlight of our grocery store trip is going to the lunch meat area! He adores getting the samples and is always working those deli ladies with his smile to get an extra slice of cheese or chicken. (I know .. I know… I’m in trouble when he gets older)
Even though he loves his lunch meat, I’m constantly trying to find creative ways to get him to eat veggies. This kid does NOT eat them plain, he use to devour them when he was little … but apparently that has changed. Now, they need to be hidden in something, like Cauliflower Crust Pizza, or roasted in the oven with honey or balsamic in order for him to eat them.
The other day I had this genius idea. Why not roll the veggies up in lunch meat and make it a fun rollup!
Typically when I make Casons lunch for school I don’t make a sandwich for him. It cuts down on the gluten he eats AND he ends up picking the meat off the bread anyways.
Ok, I have another confession to make. I’m pretty picky about the lunch meat I buy. For the longest time lunch meat grossed me out because some of them had this “gel like” whatever it was on either side of the slice so I stayed away with fingers crossed.
However, after having Cason I started to slowly tip toe my way back into the lunch meat scene. I started with Boars Head and moved into Oscar Mayer. I’ve been trying to cut back on gluten in my own diet and this recipe is perfect! You get all the same great taste of a sandwich without the carbs. It’s high in protein to keep you full longer filled with veggies and a creamy hummus for the finishing touch! Basically it’s a win win!

Description
Lunch just got a whole lot easier with these Gluten Free Veggie Turkey Rollups! This high protein, bread-free recipe is under 200 calories and only uses 5 ingredients!
Ingredients
- 2 oz. Oscar Mayer Selects Natural AppleWood Smoked Turkey Breast (about 6 slices)
- 2 tablespoons hummus (I used roasted red pepper)
- 6 matchsticks red pepper
- 6 matchsticks cucumber
- 6 matchsticks carrot
Instructions
- Pile two slices of turkey on top of each other. Spread part of the hummus in the center of the turkey. Add 2 matchsticks of red pepper, cucumber, and carrot.
- Roll turkey from one side to the other, being sure to tuck the veggies in the middle.
- Repeat process.
