Sautéed Garlic Spinach
This week has been a tough one in our Casa, both Mike and I are “broken” from our snowboarding trip. Cason has decided it would be a good time to start teething. Which means enter snot on mommy at all times, and lets add in a little bit of drool and all around fussiness for fun. Oh, and don’t forget the fever. Great! On top of that Mike found out that he now needs to have surgery on his collar bone in order to fix it. The surgery will be going down on Monday, so please pray for safety. With all the chaos of life this week it is a wonder I am able to get anything done around the house.
Ok, getting away from my “Debbie Downer” attitude. Even though it has been a tough week I am still thankful for God’s goodness and grace in the midst of trial and have been trying to find the morsels of joy out of it all. Today my joy was going to the park with my son, playing on the swing, going down the slide, and watching the duckies. It has been a beautiful week to be outside in nature.
So, this week the Helping Hubbie dish is going to be a simple one. “A” because my husband really can’t do much, and “B” because… well I just wanted something simple and delicious. We are adding another Side Dish to your husbands bag of tricks. Whenever Mike and I go out to a nice Steakhouse (you know the kind where you have to order a la carte) we get Sautéed Spinach. So, I thought I would show Mike how to make his own and now you get to reap the benefits of it. Here ya go folks… Sautéed Garlic Spinach.
To start off. Heat up a medium sized skillet to medium low heat. Add 1 1/2 T. of olive and 1/4 tsp. of red pepper flakes.
Let the red pepper flakes infuse into the oil for about 1 minute, continue to stir so they don’t burn. Add 1 T. of minced garlic, and sauté for 30 seconds again stirring constantly. Add 16 oz. of fresh spinach.
Mix the spinach, red pepper flakes, and garlic together and cover. Let sauté for 5-7 minutes, or until spinach is almost completely wilted.
Add salt & pepper to taste and stir to incorporate all ingredients completely. Viola!

- 1 T. of minced garlic (about 2–3 cloves, depending on size)
- 1/4 tsp. red pepper flakes
- salt & pepper
Instructions
- Heat up a medium sized skillet to medium low heat.
- Add 1 1/2 T. of olive and 1/4 tsp. of red pepper flakes.
- Let the red pepper flakes infuse into the oil for about 1 minute, stirring entire time in skillet.
- Add 1 T. of minced garlic, and sauté for 30 seconds again stirring constantly.
- Add 16 oz. of fresh spinach.

I just found your website this morning – and I have enjoyed your posts! I am going to make the Lemon Parmesan Garlic Orzo tonight, but I have to tell you, I make saute spinach all the time and my family cannot get enough of it! I have 2 children – 16 and 6. When I was going up you couldn’t get me anywhere near spinach, but both of my children will not only gobble this down, but will ask for second’s. We do a lot of leftovers at my house (for lunch the next day for my hubby and I) and it’s gotten to a point I have to by 5lbs in order to have some the next day! While I love the red pepper idea, my kids hate anything spicy – and I saute the garlic before adding the spinach. I can’t wait to check in on you later! Best of luck!
