We made it!
The first event out of three I have in the next three weeks is officially done! Whew … This weekend I planned a community Easter Egg Hunt for our new church! We had over 3,500 eggs for the kiddos to hunt, new families from the community came out AND showed up at church the next day. All in all it was a success with lots of sugar filled tummies!
Next up, baby shower and finally little man’s party! I feel like I’m in the home stretch! Plus did I tell you we sold our house within 48 hours for above asking! Woot woot!
I hope everyone had an amazing Easter weekend with family. We definitely did, and in the most unexpected way.
I had plans for the Easter Egg Hunt, making resurrection rolls with Cason, going to church, hiding an easter basket in the house for Cason to hid. But then something happened. The most amazing thing happened!
After our Easter Egg Hunt on Saturday, right after our family nap time. Cason and I sat on the couch reading through a bunch of books he had set out. Most of them were books we got from Financial Peace Junior (a Dave Ramsey series for kids), but then we read through The Beginners Bible, a bible for little kids.
Lately, he can’t get enough of that book. He doesn’t want to read just one story in the book, he wants to read the ENTIRE book. So when he pulled that one out to read I asked him … “where do you want to start?” He said, “from the beginning.”
Okay, here we go. I opened it and started reading. We read about Jesus being born in a manager, about King Herod trying to kill Jesus, about Jesus growing up, about him visiting the Temple in Jerusalem and sitting with the teachers, then about Jesus’s cousin John and how John baptized Jesus.
That is when it happened. Cason stopped me and said, “Mommy I want to be baptized like Jesus.”
I said, “Sure buddy, but if you want to be baptized you need to have Jesus in your heart first. Do you want Jesus in your heart?”
He said “YES I do. I want to be baptized. Were you baptized?
I said “Yes, mommy was baptized after Jesus came in her heart. And you know what I did. I told Jesus that I was sorry for my sins. That I needed his help and know that he died on the cross for me. Then I asked him in my heart. Do you want to do that?”
YES. And then slowly he closed his eyes and whispered… “Jesus can you come into my heart?”
I asked him if he wanted daddy to be there too, he smiled and said yes. So we got daddy, all sat on the couch and my sweet tender hearted 3 year old son asked Jesus into his heart! After he finished, he looked up at me with the biggest smile, gave me a huge hug and said. “Mommy I’m like you, I have Jesus in my heart like you and daddy!”
BEST DAY EVER! That memory will forever be marked on my heart!
So that was part of my weekend! I was so excited that I had to share with you guys. Out of all the crazy stuff going on in our life right now, that moment was pure perfection and makes up for all the bad!
One more thing that happened this weekend, well actually during the week … while I was stuffing easter eggs with friends and drinking wine were these Key Lime Cheesecake Bars.

These Key Lime Cheesecake Bars are incredibly creamy, slightly sweet, on the lighter side with the addition of greek yogurt, and have just the right amount of key lime flavor. The crust is not a normal graham cracker crust, this crust is made out of pecans, a little butter and some ground cinnamon. I promise you will fall in love and those graham cracker crust days will be long gone!
These bars are refreshing, light, and perfect as we head into the spring and summer months.
Let’s just put it this way, I may have eaten more than I should’ve AND if I am in charge of bringing dessert to someones house I know what I’ll be bringing.

Description
Easy gluten-free cheesecake bars made lighter with Greek yogurt and a delicious cinnamon pecan crust.
Ingredients
For the Crust:
- 2 cups pecans
- 2 tablespoons unsalted butter, melted
- 2 tablespoons raw honey
- 1/4 teaspoon ground cinnamon
- pinch of salt
For the Key Lime Cheesecake Filling:
- 8 oz. of cream cheese, softened
- 5.3 oz. of plain greek yogurt
- ¼ cup of sugar
- ½ teaspoon of vanilla extract
- 1/3 cup key lime juice
- 1 teaspoon key lime zest
- 2 egg whites
Instructions
- Preheat oven to 350.
- Line an 8×8 glass baking pan with parchment paper. (this will help with removal later on) Set aside.
- Add pecans to a food processor (or blender) chop until finely diced. To the food processor with nuts, add in butter, honey, ½ teaspoon of cinnamon and a pinch of salt. Blend until everything is mixed and the “crust” holds together a bit.
- In a medium bowl mix cream cheese, sugar, and vanilla extract using a hand mixer. Blend until smooth and creamy.
- Add in greek yogurt, key lime juice, key lime zest, and egg whites. Blend until combined – be sure not to over blend.
- Pour cheesecake mixture over pecan crust – smooth out so the cheesecake mixture is even.
- Bake for 30-35 minutes.
- Remove from oven, place in refrigerator let cool for 30 minutes. Serve.
