Rustic Avocado Sandwich
Really?!? Easter is on Sunday! Where did all the time go? This time last year my husband and I were coming home from the hospital with our first son! We had Cason on Good Friday (it was definitely a “good friday” for more than one reason) and we came home Easter Sunday. 🙂
Easter being this Sunday also means that my parents will be here on Monday! And… Cason’s 1st Birthday Party is next Saturday. Yikes… need to get to planning and creating in order to make this Mustache Party happen. I can’t wait to show you guys the pictures!
So with all the stuff we have going on around here I thought a quick meal was in order. I know you will LOVE these Rustic Avocado Sandwiches. The crunch from the bread, creaminess from the avocado, and zing from the olive oil & vinegar dressing is amazing!
How to Make This Easy Avocado Sandwich
To get started, set your oven to broiler on high. Slice 4 mini ciabatta rolls in half and place on baking sheet.
Spread 1 tsp. of olive oil & vinegar dressing (or Italian dressing) over each side.
Place 1 slice of Provolone cheese on the bottom slice of bread.
Put bread in broiler for 5 minutes, or until cheese is melted. Remove from oven. In a small bowl, mash up 4 avocados.
Place 1/2 cup of mashed avocados on the bottom half (the cheese side). Put the top on. 🙂
Eat away! 🙂 I won’t judge if you have two sandwiches. (I do!)
