Easy Chicken Breasts with Peach Salsa

I think one of the things I love about having this blog, is it kinda serves as an online journal for me. A chronological story of what is happening in my life, the foods we are eating, and what is going on in my heart at that particular time.

I started journaling, in a book not online, when I was in college. It began as a way that I connected with God, but then quickly turned into a way of me writing out the things I was going through and the truths I believed about God.

Some of my darkest times were written down in that book. When my mom stopped drinking, I made her a book of my journal entries. How I had been praying for her and begging God to intervene. At the time I was kinda angry with God and didn’t understand why all of that hurt had to happy and why it had to take 4 years for a break through. But there is healing and joy in looking back and remembering and seeing God come through!

Right now my heart is hurting. I find myself searching online for “self help books,” hoping maybe that will give me a boost out of this season. I just need to see a light at the end of the tunnel. But I know a book isn’t gonna do the trick. I know that what I need is comfort from God … but right now I’m just struggling with going there. I feel disappointed or let down by God. I’ve had faith for big things, God sized things, things that would make me look like a fool if they didn’t come true. And because they haven’t come true, I do feel like a fool. I feel like God has let me down and I’m struggling with going back to him right now, because what’s the point of faith if all there is is a hurt on the other end.

Now before you think I’ve gone off the deep end let me assure you. Those are my feelings! If there is one thing I’ve learned over the years feelings are NOT fact! Feelings are just a sign of something bigger going on deep down or of something God is trying to heal.

The funny thing is, well probably only funny to me, I went through this exact thing in college. Same thoughts, same questions .. and Mike walked through it with me then and is walking through it with me now. Questioning God’s character .. in essence what I feel like I’m questioning is His goodness. I know deep down God is not out to get me, He is a good God (he has proven that through the story of my life), He is faithful, He wants the best for us, and wants to give us the desires of our heart. But He IS after our heart, our whole heart. And if going through trials help peel back another layer of who I am so that God can heal that hurt or speak truth into the lie that I am believing about His character or who he is … then so be it!

One of the things that IS helping is recalling the good times. You can’t focus on fear or be consumed by the “trial” you’re going through if you’re recalling all the good times. The times where God did show up, where I felt His presence more than ever, where He helped me break through walls in my own life I didn’t think I had or would be able to break through.

I have to switch my focus, and reading through my old journals or even old blog posts is encouraging!

As always, just some thoughts of whats going on in my heart to yours. Now, as Paula Dean would say, let’s get to some recipes from my family to yours!

It’s still August so gosh darnit I’m not letting go of the summer recipes until September first … and you’ll see that because I have comfort food recipes up the ying yang for ya once September hits! (bring on the pumpkin) ……. But not yet!

Today is a Pan Seared Chicken rubbed down in one of my favorite spice rubs then topped with a fresh Peach Salsa that’s filled with juicy peaches, red pepper, onion, cilantro, jalapeno, and a dash of vinegar. All in only 30 minutes, which makes this recipe perfect for school nights! Just add some rice or quinoa and you’re set!

Description

An easy Pan Seared Chicken Breasts recipe with fresh Peach Salsa. This flavorful chicken dinner is done in 30 minutes. It’s the perfect meal for busy weeknights!


Ingredients

Scale

Spice Rubbed Chicken:

  • 3 chicken breasts
  • 1 teaspoon of garlic powder
  • 1 teaspoon of ground cumin
  • ½ teaspoon of ground coriander
  • ½ teaspoon of smoked paprika
  • ½ teaspoon of sea salt
  • ¼ teaspoon of ground black pepper
  • 2 tablespoon of olive oil

Peach Salsa:

  • 1 large peach, diced (about 1 1/2 cups)
  • 1/2 cup diced red pepper
  • 1/3 cup diced red onion
  • 1/4 cup diced fresh cilantro
  • half a jalapeno, diced
  • 1 tablespoon red wine vinegar
  • salt to taste

Instructions

  1. In a small bowl, mix garlic powder, cumin, coriander, smoked paprika, sea salt, pepper, and olive oil. Mix until combined.
  2. Rub mixture over both sides of the chicken.
  3. Heat a large skillet to medium high heat. Place chicken on skillet and cook each side for 4-6 minutes depending on thickness. You just want to make sure there is no pink in the middle. Remove and let rest.
  4. In the mean time, in a medium bowl add peach, red pepper, red onion, fresh cilantro, jalapeno, red wine vinegar, and salt. Mix together so everything is combined.
  5. Slice chicken and top with peach salsa.
