Well folks. This is it. This is my last hurrah before Joyful Healthy Eats turns fall comfort food on you.
It was only a matter of time. I held off as long as I could. But this Thursday is September 1st so I’m going to have to depart from fresh summer foods and move into full an “fall food” game mode!
Speaking of game mode. This Saturday we had our 5th annual Ladies of Fantasy Football Draft. Did you know that I’m kinda obsessed with fantasy football?
I wasn’t always. It really started with a friend and I trying to find a way to endure NFL Sunday ticket on the weekends. Don’t get me wrong. I like football. I love sports. But our husbands were ESPN-aholics and we watched football from 11am till 11pm or when the last game on Sunday ended. And for the love of Pete I needed something to help me get through it!!!
So we created the Ladies Fantasy League. Each year we hold a real draft at someone’s house, set up our “command center” i.e. 8-10 laptops, sheets of all the Top Picks and then draft our teams.
The first year we did this I LOVED it. I was an athlete growing up and still have that competitive side in me. It definitely comes out in fantasy. Mike and I would fight over which game we would watch on Sunday because one of my players was playing in one game and one of his was playing in another. It was great and brought excitement to Sunday Football!
This year we really did it up for the draft. We powwowed outside with 8 laptops looking out at a pool, drinking mimosas (cuz… duh we’re girls), and had a huge spread of food while the husbands watched the kids! #winning
One our rules from the beginning has been … NO BOYS! And that means no boys helping with the draft or during the season. We want it to be just girls, that’s what makes it fun! Now of course, my husband likes to walk around looking at all the computers during the draft to see who everyone is picking. He just can’t resist, but I don’t let him help. In fact I yell at him if he does! hehe (see I’m competitive)
I look forward to it every year and it has definitely gotten me more into football! Plus it’s just fun and I want to show those boys girls can play fantasy football too! So there! (as I’m singing “Anything you can do, I can do better. I can do anything better than you.”

Everything about this dish is light, refreshing, and perfect! The combo of the fresh mozzarella combined with the sweet fire roasted peppers, juicy peaches, and lemony basil just screams summer to me! It’s the perfect way to go out with a bang before the time of scarves, boots, soups, and all things pumpkin!
But you know what, if you make this in the middle of November I wouldn’t tell anyone. In fact I’ll be cheering you on! 🙂 It’s so good, I’ll probably be making it then too! It comes together so fast and only has 5 ingredients – you’ll want to keep making it!

Ingredients
- 1 large peach, sliced
- 2 roasted red peppers, quartered
- 7–8 mozzarella medallions
- 8–10 basil leaves
- drizzle of olive oil
- pinch of sea salt and cracked black pepper
- Balsamic Reduction
Instructions
- Make the balsamic reduction. Click here for recipe.
- On a large plate, alternate the sliced peaches, red peppers, mozzarella medallions, and basil leaves.
- Drizzle with olive oil, sea salt, and pepper.
- Serve. Drizzle with Balsamic Reduction.
