So with family in town last week I not only had to plan out meals for the week but also had be mindful of new recipes I could post for you guys. My family loves any and everything on the grill, as do I, if you couldn’t tell already:). I had some ground turkey meat in the freezer so I thought I would whip up a quick burger. Everybody needs a good burger up their sleeve. I mean just thinking about taking a bite into a toasted bun, perfectly moist meat, warm melted cheese, and all my favorite topping makes me happy. I am salivating just thinking about this Roasted Pepper Turkey Burger. I seriously think that if I was competing against Bobby Flay on his “Throwdown with Bobby Flay” I would so win… and then he would walk away crying. (ok, maybe not crying but for sure walk away)
This burger kind of happened by throwing a bunch of stuff in the bowl and hoping it turned out and OH MY GOODNESS did it turn out. I had 8 burgers and actually ran out because people wanted seconds. (including myself) Gotta love it when an accident turns into a hit!!!
Have you had any accidents or mad-scientist creations turn into an absolute hit that even you were surprised by the deliciousness? Well, this Roasted Pepper Turkey Burger is just that! My mad-scientist creation! 🙂 The sweetness from the Red Pepper and heat from the Poblanos is so good, then I topped it with goat cheese and avocado. A-MAZING!! You have to try it! I promise it will be your go to summer burger.
Ok, enough of the chit-chat. To get started you will need to chop up 1/2 cup of onion, 1/4 cup of fresh cilantro, and 2 garlic cloves (minced). Add all of these ingredients to a bowl along with the 2.5lbs. of ground white turkey meat. (I know its alot, but believe me you will want it!)
Mix together and then add 1 egg, 1 T. of cumin, salt & pepper.
Make sure all ingredients are thoroughly combined. Form 1/4lb. burgers and set aside.
Now, go turn the grill on to medium high heat. Season 3 red peppers and 2 poblano peppers with olive oil, salt & pepper. Place them on the grill.
Roast peppers, continually turning so all sides are charred. (about 5-7 minutes)
Bring peppers inside and let sit. Put formed burger patties on the grill. Grill for 5-6 minutes per side. (if you grill them longer than that they will be dry, so pay attention to the time)
Once burgers are done, set aside. Now deseed and julienee your roasted peppers from the grill. (I usually leave the charred skin on because I like the taste, but if you want to take it off you can just use a knife to scrap the outside shell off)
Alright, time to put this bad boy together! Bring out your buns (I toast mine because I like them warm and crunchy), next the turkey burger, then add a little bit of your red peppers and poblanos.
Thats the main part of the burger, for additional toppings I added 1 slice of goat cheese and sliced avocado. YUM!!!
