I guess I’ll just tell you want I’m enjoying right now. I’m enjoying the weather here in Texas … boring I know … But I’m in Texas and cool weather is something to be thankful for. I get to wear ankle booties and not sweat while I’m standing outside. I get to wear my sweatshirts and remenise of my Midwest living days. Which is definitely a cause for celebration. If we could add a few colorful leaves to the mix I’d be one happy camper.
I’m enjoying the small group we are in at church. I really feel like we’ve started to get the community we have been longing for for 3 years. Which is a huge breakthrough for us!
I am enjoying heading into the holiday season. I don’t feel like I’m ready for it. But I’m excited to start binge watching Hallmark Christmas movies and make Christmas cookies with friends and family.
I have loved the overwhelming feeling of JOY God has given me the past couple weeks. I cannot express to you the feeling of peace and joy I’ve had, except that it feels like a complete 180 to where I was at about 2 months ago! And that I am sooo thankful for!

The Best Oven Roasted Potatoes
In my mind the perfect Roasted Potato has a slightly salty crispy skin with a soft warm inside. Honestly, if you do that part right, you could probably stop there. But you know me. I’m not gonna stop there. I need to add at least one more layer of flavor on.
I’m a huge Tex-mex lover and completely obsessed with Chimichurri Sauce. As a way to combine that love, fall flavors, and put it on your dinner table I created a Sage Salsa Verde!
Um… ya’ll. Absolutely delicious! The potatoes and this Salsa Verde were meant for each other. AND it totally changes up the typical mashed potatoes to a fun gorgeous side dish you’ll be proud to adorn on your dinner table.

Description
Crispy Roasted Potatoes with Sage Salsa Verde is the perfect side dish recipe to change up on your holiday table. Sub the plain old mashed potatoes with these flavorful, easy to make, crispy oven roasted potatoes!
Ingredients
- 1.5lbs new potatoes
- 1 1/2 tablespoon olive oil
- salt & pepper to season
- Sage Salsa Verde:
- 15 leafs of fresh sage
- 1 1/2 tablespoons fresh thyme
- 1 sprig of fresh rosemary (leaves removed from the stem)
- 2 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 1/2 teaspoons red pepper flakes
- salt & pepper to taste
Instructions
- Preheat oven to 400.
- Add potatoes to a bowl (cut the large ones in half), add olive oil, salt, and pepper. Toss to coat.
- Place potatoes on a baking sheet in a single layer.
- Bake for 20 minutes.
- To a small food processor add, sage, thyme, rosemary, lemon juice, olive oil, red pepper flakes, salt, and pepper. Blend until leaves are broken down.
- Pour mixture over the potatoes and serve!
