One of the goals I had for 2017 was to work out 4-5 times a week. Last year I was pretty consistent with 3-4 times a week. But I wanted to up my game this year and get back into college shape, if not better.
Most people have a specific time of day where they feel like they are “in the zone” when it comes to working out. For me it’s the mornings. I just mentally cannot get myself amped enough to workout in the evenings or afternoons after a long day of “being mom” or working.
So my normal gym time is around 9-10am, Monday – Friday; weekends are for relaxing and fun!
I love starting my day off with a workout. I feel like I’ve already accomplished something for the day, I feel better about myself, and it energizes me. Because I work out in the morning I need to make sure I have enough food in the tank so I don’t pass out! (because it has happened before)
I usually have a yogurt with homemade granola, toast with almond butter and bananas, or a protein shake. Just depends on what I’m feeling and how much time I have.
So when AllWhites®100% liquid egg whites challenged me to write a Pre-Workout recipe I gladly took it on! Plus it gives me another recipe to devour before my morning workout, which is always a bonus.

I already kinda had an idea of what I wanted to create with these Egg Whites. I knew I wanted to create a sandwich of some sort, it was just a matter of making it easy to eat.
Scrambled eggs on top of a sandwich was gonna be a little hard so I was shooting for more of an Egg McMuffin look with the circular egg on top. Well, I tried a couple of different ways to make it. All involving the stove and all involving a mold or ring of some sort.
Fail. Every time I tried to cook the egg whites in the mold they would somehow find a crack and seep through the bottom of the mold, thereby creating scrambled eggs! So irritating. But then I had this stroke of genius. I remembered the 2 minute omelets I made in the microwave a couple months back. Ahah! Bingo. I added my egg whites to a small ramekin and placed it in the microwave for 1 minute. Viola! Perfect eggs and perfectly round!
This recipe turned out to be way better than I imagined! It literally takes 10 minutes to make, is loaded with flavor, has all the things you need before a workout. Plus it taps in at only 279 calories! All in all its a major winner!

Description
Easy 15 minute BACON AVOCADO EGG WHITE BREAKFAST SANDWICH, an easy “power” breakfast with 15 grams of protein per serving.
Ingredients
- cooking spray
- 1 1/3 cup AllWhites® 100% liquid egg whites
- salt & pepper to taste
- 4 strip of bacon
- 2 avocados, mashed
- 2 whole wheat english muffins, halved and toasted
- 1 tablespoon diced green onions
- optional: sriracha
Instructions
- Line a large plate with paper towels. Line up the strips of bacon 1″ apart on prepared plate. Cover with paper towel.
- Place bacon in microwave. Cook on HIGH for 2 minutes. Remove and flip the bacon. Cook another 2 minutes. Flip again. Cook another 2 minutes. Remove and let sit.
- Spray a small ramekin (2.5″) with cooking spray. Pour 1/3 cup of the AllWhites® 100% liquid egg whites into the ramekin. Season with salt & pepper.
- Place ramekin in microwave and cook on HIGH for 1 minute. Remove.
- Assemble the Breakfast Sandwich: toasted english muffin half, 2-3 tablespoons of avocado mash, 1 strip of bacon (halved), cooked egg whites, garnish with green onions and sriracha. Serve!
