- Whole grain toast – You can use other toast varieties as well, I just prefer whole grain to keep this breakfast as healthy as possible.
- Avocado – The star of this breakfast! Look for perfectly ripe avocados that will be easy to mash.
- Eggs – For making the soft-boiled eggs
- Salt and pepper – Just a pinch of each for flavor.
How to Make Smashed Avocado Toast with Soft Boiled Eggs
There’s two parts to making this easy avocado toast with soft boiled eggs – making the perfect soft boiled eggs and assembling the avocado toast.
Make the Soft Boiled Eggs
- Boil the eggs. Bring a medium saucepan to a boil, then added the eggs using a slotted spoon. Cover and boil for 6 1/2 minutes.
- Add the eggs to an ice water bath. While the eggs are boiling, prepare an ice water bath. Immediately put them into the ice water and let sit for 3 minutes. Gently remove the shell, taking care not to break open the egg.
Assemble the Smashed Avocado Toast
- Smash the avocado. Mash up your ripe avocado with a fork or potato masher.
- Toast the bread. Toast your bread according to your personal preference.
- Assemble & serve. Place the toast on a plate, top with 1/3 cup of avocado and a soft boiled egg. Season with salt and pepper, then serve.

Ingredients
- 4 slices of whole grain toast
- 4 avocado, mashed
- 4 whole large eggs
- salt & pepper
Instructions
Soft Boiled Egg:
- Fill a medium saucepan with water, bring to a boil.
- Add whole eggs to boiling water using a slotted spoon. Cover and boil for 6 1/2 minutes. (not a minute under or over)
- Prepare an ice water bath for the eggs. After the 6 1/2 minutes is up. Immediately put them into the ice water bath. Let sit fore 3 minutes. Gently remove the shell. Set aside.
Avocado Toast:
- Toast the bread.
- To assemble: place toast on a plate, top with 1/3 cup of avocado, 1 soft boiled egg and season with salt & pepper.
- Serve.
