Apple Cinnamon Scones
Well, as of right now I have been in and out of the little closet underneath our stairs for the past 3 hours.
Mental I’m exhausted and physically my back is starting to feel the pain of sitting on the tile floor for 3 hours at 18 weeks pregnant!
Guys, I can do hurricanes. In fact, we were here in Houston when Hurricane Ike ripped through, which was a category 2. But tornadoes, those I don’t do.
I am freaked out by tornadoes. Maybe I’ve watched the movie “twister” too many times. I’m not sure. But the idea of something coming down from the sky without much warning and literally reaping stuff up from the ground thereby leaving a disaster.
Yeah.. it definitely scares the crap out of me.
So every time I hear a tornado warning for our area, which has literally been from 4pm till 9:00pm, I get in the little closet under the stairs with my dog and huddle up.
Ugh… ya’ll. I just want it to be the next day already. For my husband to be home and to deal with the flooding.. none of this tornado stuff.
Ok, moving on to taking my mind off the warnings going on all around me by focusing on these Apple Cinnamon Scones. And boy do they help shift my focus. These are bursting with fall flavors.
I feel like it’s too early to whip out the pumpkin recipes, but apples. Apples I can do… and when they are nestled in a crumbly scone dough. Ohhh yaassss!!! Heavens yes!
Why I Love This Easy Scones Recipe
What I love about this scone recipe is that the dough portion is actually made in a food processor. It literally takes the work out of it. No kneading necessary! Once the dough is a “dough,” just put it on a floured surface add the cinnamon apples and let the goodness begin!
I like to form my dough into a disc and then cut the dough into pizza slices. But you could definitely form the dough into a rectangle a cut the scones into squares. Totally up to you. Whatever suits your fancy!
Either way you’ll get a nice crumbly, yet moist dough that is not overly sweet (like a scone should be). Each bite has a tender apple with a hint of cinnamon flavor. I guarantee you’ll love these. Especially with a cup of coffee. It’s perfection!

Description
These fresh Apple Cinnamon Scones are crumbly, moist, and full of apple cinnamon flavor. They’re the perfect sweet treats for fall, and they’ll go great with your morning cup of coffee!
Ingredients
- 2½ cups whole wheat flour
- ½ cup brown sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 8 tablespoons unsalted butter, cut into pieces
- ⅔ cup unsweetened vanilla almond milk
- 1 teaspoon vanilla extract
- 1 egg
- 1 1/2 cup finely diced granny smith apples
- 1 tablespoon butter
- 1 tablespoon maple syrup
- 1/2 teaspoon ground cinnamon
- dash of salt
Instructions
- Preheat oven to 425 degrees.
- Prepare a baking sheet by place a large sheet on parchment paper on it.
- In a medium saute pan add 1 tablespoon of butter and diced apples. Saute until just tender, about 4 minutes. Add in the maple syrup, 1/2 teaspoon of cinnamon, and a dash of salt. Stir to mix everything together.
- Place entire pan in the freezer to cool the apples.
- In the meantime, to a food processor add whole wheat flour, brown sugar, baking powder, baking soda, salt, cinnamon and nutmeg. Blend to mix.
- Next add pieces of butter to the blender. Pulse blender until the butter is combined and starts to look like small peas.
- In a small bowl, add almond milk, vanilla extract and an egg. Whisk together and add liquid mixture to the blender. Pulse the blender until the mixture starts to look like a dough and wet and dry ingredients are combined.
- Place dough on a well floured surfaced. Add apple cinnamon mixture to the dough. Using well floured hands, gently fold the apple mixture into the dough.
- Form the dough into a large disc shape. (you may need to keep adding flour if it’s too sticky)
- Cut dough into 8 triangular pieces.
- Add the scones to the prepared baking sheet. Place about 1″ apart from each other.
- Bake for 13-15 minutes. (14 minutes was my sweet spot)
- Remove from oven. Let cool for 5 minutes and serve
