Spinach Artichoke Dip Wonton Bites

Spinach Artichoke Dip Appetizer

Spinach Dip was my jam this time of year. It was a staple appetizer that my mom would make every year and every year my brother and I would camp out in front of the dip table with a mound of crackers devouring the Spinach Dip!

Need a way for your kids to eat spinach? Hide it mayo, seasoning, cream cheese, sour cream and then serve it on a cracker.

Even though I loved her version growing up I have been searching for a better way to have that same great flavor but without all the cream and cheese. Don’t get me wrong, it’s delicious but needed to tone it down a bit.

One of the things that made my mom’s Spinach Dip the best is the spinach. She would always buy frozen spinach, but instead of thawing it out on the counter then mixing it with the other ingredients like most people do. She would put it in a pot of boiling water and cook it again. It was like that process brought the spinach back to life again and you could totally tell a difference in flavor!

She would also use Knorrs Vegetable Blend for the seasoning and then add in chopped water chestnuts for some added crunch.

These Spinach Artichoke Dip Bites are a play on my mom’s spinach dip and the ever so famous spinach artichoke dip. I use the same cooking method my mom did with the spinach, recooking the spinach in a pot of boiling water then squeezed all the liquid back out of the spinach. After that I added in water chestnuts for some crunch, finely chopped artichokes, my own spice blend (so I can control the sodium count), then a little bit of cream cheese and mozzarella.

As a way to make this super easy and the perfect bite size appetizer. I decided to use wonton wrappers as the “vehicle” for this amazing dip instead of chips or crackers. I used a mini muffin pan to help with consistent portions and they turned out perfect! Just add one wonton wrapper to each muffin tin and fill it with a tablespoon of the spinach artichoke dip.

Because it IS Christmas time I topped each of the bites with cherry tomatoes for a flare of red. But honestly, I’m so glad I did, it gave these bites a sweet touch that completed the whole dish.

Description

These baked Spinach Artichoke Dip Wonton Bites are filled with homemade spinach artichoke dip. It’s an easy healthy appetizer that’s perfect for a large crowd!


Ingredients

Scale
  • 1 package of frozen chopped spinach
  • 4 oz. softened cream cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup chopped artichoke
  • 1/3 cup chopped water chestnuts
  • 2 green onions, sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes
  • salt to taste
  • 24 wonton wrappers
  • 1/2 cup quartered cherry tomatoes

Instructions

  1. Preheat oven to 400 degrees F.
  2. Add frozen spinach to a small sauce pan with water till the spinach is just covered. Cook on medium high heat until the spinach is thawed out and somewhat cooked. (about 8-10 minutes) Drain spinach from pot. Squeeze out all the liquid and place spinach in a small bowl.
  3. To the spinach bowl add cream cheese, mozzarella cheese, artichoke, water chestnuts, green onion, garlic powder, onion powder, red pepper flakes and salt to taste. Thoroughly mix with a spoon until everything is combined and it looks like a dip.
  4. Spray a mini cupcake pan with cooking spray.
  5. Add one wonton wrapper to each muffin hole, pressing the wonton wrapper into the bottom.
  6. Add one tablespoon of spinach artichoke dip mixture to each wonton wrapper.
  7. To each wonton cup add 2 small quartered cherry tomatoes.
  8. Bake for 8-10 minutes, or until edges are slightly browned.
  9. Serve!
