I think I forgot how tired you get in the last part of pregnancy.
I have been going strong since the beginning. Working out 3-4 times a week still, making recipes like crazy to get ahead on my posts so I’m ready when the baby comes, and then working on my computer during the day and some nights to write posts. Y’all. I’m exhausted. Physically and mentally.
I had a cup of coffee this morning, which was absolutely delicious. But it’s 2pm now as I’m writing this post and I could fall asleep while typing.
This momma needs some rest! But I’m such a Type A personality, I still see tasks that need to be done in front of me so I won’t stop. Unless, Mike physically makes me stop. Which I’m sure is coming soon.
Thank goodness for a husband who knows when and HOW (which is the important part) to step in and tell me to slow down. He knows I’m a go getter and discipline but also knows that I’m an introvert and recharge with some quiet alone time. The past couple of days he’s done just that. Given me a break and allowed me to sit at the house with the fire going … in pure silence. It’s been wonderful!
Why is it that I can be super task oriented and dedicate my time to the things I want, namely working out, spending time with family, cooking and this blog. But the things I know I NEED I don’t prioritize?
Last year, I had a goal to read the entire bible in one year. I was a little nervous about it because Mike has tried to do it for a couple of years but at some point in the 365 days he gets behind and then it’s hard to catch up. I was determined to finish it as soon as January 1, 2017 hit. I started off strong. I was discipline, diligent and actually really enjoyed reading it. Until I got to March and started reading Leviticus and Numbers.
Ugh… it’s basically a book for the priests to inform them of the rules and sacrifices that the Israelites had to do in order to remain “clean” before the Lord. Numbers is about counting all the 12 tribes of Israel and how each tribe was broken down and what they were responsible for.
I had hit my limit. I kept thinking as I was reading, maybe I’m almost done and then the next day, same thing. I finally just got bored and stopped and then never started back up.
This year I am going to finish. If I can set my mind to and accomplish the goals for my body and blog that I want, why can’t I or why shouldn’t I be able to do the same thing spiritually.
Anyone else in the same boat?
Ok, moving on to today’s recipe, these Greek Chicken Lettuce Wraps topped with a Creamy Tzatziki Sauce.
Pretty much Tzatziki Sauce is one of my love languages, well that and chocolate, and balsamic, peanut butter and a whole list of other things. But Tzatziki is definitely pretty high up there, maybe top 10. So if I can come up with an excuse to add it to a recipe I’ll take it!
These Chicken Lettuce Wraps come together in minutes, are super light and healthy, low carb and perfect for a family meal!
The chicken is coated with a flavorful dry spice and then cooked until they are no longer pink. (don’t overcook them or you’ll end up with dry chicken … gross) Then they are nestled in a lettuce wrap along with sliced cucumber, tomatoes, red onion (you could add olives too if you wanted) and drizzled with a homemade tzatziki sauce.

Low Carb Gluten Free Greek Chicken Lettuce Wraps with Tzatziki Sauce – an easy healthy 30 minute meal your family will devour!
Ingredients
Greek Chicken:
- 1.5 lbs. boneless skinless chicken breast, cut into 1” cubes
- 1 tablespoon lemon juice
- 1 teaspoon oregano
- 1 teaspoon parsley
- 1 teaspoon garlic powder
- salt & pepper to season
- 1 tablespoon grape seed oil
Tzatziki Sauce:
- ½ cup plain greek yogurt
- ¼ cup grated cucumber
- 1 tablespoon lemon juice
- ½ teaspoon dry dill
- ½ teaspoon garlic powder
- salt to taste
Toppings:
- 1/2 cup halved cherry tomatoes
- 3/4 cup sliced cucumber
- 1/3 cup thinly sliced red onion
- 12 lettuce cups
Instructions
- To a large bowl add chicken breast, lemon juice, oregano, parsley, garlic powder, salt and pepper. Using a spoon toss all the ingredients together until the chicken is coated.
- Heat a large skillet to medium high heat. Add in grape seed oil and then the seasoned chicken breast. Cook chicken for 2-4 minutes per side until they are no longer pink. Remove from skillet and let rest.
- In the meantime, to a small bowl add greek yogurt, cucumber, lemon juice, dill, garlic powder, and salt to taste. Using a spoon mix everything together. Set aside.
- Assemble the Lettuce Wraps: to one lettuce cup add 3-4 cubes of chicken, tomatoes, cucumber, red onion and a dollop of tzatziki. Repeat process.
- Serve!
