With all the sweet treats and Christmas cookies floating around this holiday season it’s good to make sure there is a lean high protein option on the table for your guests to munch on. These Caprese Chicken Skewers featuring Just BARE Boneless Skinless Chicken Breasts are definitely it.
I honestly don’t think I’ve seen more beautiful chicken breasts. Is that weird to say about raw chicken? Most of the time, once you take the chicken out of its packaging it’s gigantic (like something out of a steroid movie) and covered in fat. But not these chicken breasts. They are normal portions and already trimmed. Seriously, all I had to do was cube these babies, season them and voila!
That’s what I love about Just BARE Chicken, they focus on healthy raised chickens and you can tell when you get the product! The look and feel of them is completely different, as well as the taste! Just BARE is continually raising the bar when it comes to healthy natural chicken, raised with no antibiotics – ever. Honestly, I don’t buy anything else because I prefer its product! You can’t beat the quality and quality is important when it comes to feeding my family!
If you know anything about me by now, you know I’m all about the balsamic! It is totally hands down my favorite vinegar of all time. I use it in marinades and dressings but my favorite way to use it is as a glaze.
Basically, you reduce the vinegar down to a syrup. Balsamic vinegar itself has a lot of sugars in it so you don’t need to add anything else to the vinegar when cooking it down, especially if you have a good one. I highly recommend buying a good balsamic. I actually buy mine at a mall in the store called Oil & Vinegar. Once you try a balsamic one you’ll never go back, you can totally tell the difference.
On a side note, my son absolutely loves that store. It’s filled with all kinds of, you guessed it, oils and vinegars. But they have sampling stations that allow you to mix and match the different options they have available for purchase. My 5 year-old will walk straight back to the sampling station and start mixing basil oil with date balsamic; or citrus olive oil with fig balsamic. It cracks up the store owners and me. Strange child I know, but I absolutely love that he isn’t afraid to try new things AND that he has a palate for it!
Ok, back to the point. Make sure you get a balsamic vinegar, it makes the world of difference when you are making a balsamic reduction/glaze!
I’m sure you’ve already been to your fair share of holiday parties by now and probably have hosted a few. But the season isn’t over yet so I wanted to make sure you had one last showstopping appetizer recipe to serve, especially as Christmas and New Year’s Eve are fast approaching.

These Caprese Chicken Skewers are absolutely divine! The chicken is seasoned with garlic and basil then sautéed until slightly browned and stacked with all the caprese favorites – tomato, fresh basil and fresh mozzarella. It’s the perfect bite size appetizer your guests will absolutely love. Serve it with balsamic reduction on the side to let each guest top their own individual bite and watch these babies fly off the appetizer table like hot cakes!

Easy Caprese Chicken Skewers drizzled with a homemade Balsamic Glaze absolutely irresistible and make the ULTIMATE party appetizer! Just watch these gluten free caprese bites disappear from the appetizer table!
Ingredients
- 1/2 cup balsamic vinegar
- 14 oz. JustBARE Natural Boneless Skinless Chicken Breast, cut into 1” cubes
- 1 teaspoon garlic powder
- 1/2 teaspoon dry basil
- 1/4 teaspoon black pepper
- 1/4 teaspoon sea salt
- 1 tablespoon grape seed oil
- 28 cherry tomatoes
- 28 mini mozzarella balls
- 28 leafs of basil
Instructions
- To make Balsamic Glaze: Add balsamic vinegar to a small saucepan. Bring to a boil, reduce to simmer until it starts to thicken. Stir the entire time (or it will burn), about 5-7 minutes. You are basically looking for the balsamic to turn more syrupy and coat the back of spoon. Once it is thick, remove from heat and pour into a small serving container. Set aside.
- In a small bowl, add chicken cubes, garlic powder, basil, pepper and salt. Using a spoon, toss all the spices to coat the chicken.
- Heat a large skillet to medium high heat, add grape seed oil and then chicken. Cook chicken for 3-4 minutes per side until slightly browned and no longer pink on the inside. Remove the chicken from the pan and let rest.
- On a wooden appetizer skewer, add one cherry tomato, one leaf of basil, one mini mozzarella ball, and a cube of chicken. Repeat until all skewers are completed.
- Serve with balsamic glaze.

Can the chicken be made the day before, then just heated up before skewering?
Yes, absolutely.
These turned out so yummy! We did different variations so if guests didn’t want basil or couldn’t have cheese we did some with and some without. Then my sons and I ended up just eating the extra ingredients afterwards.
Instead of chicken, I was thinking of shrimp. You you recommend the balsamic or another glaze?
