How is it that it is already July and I haven’t posted a Burger recipe yet?

Something must be wrong with me! Burgers are the epitome of summer grilling!

Last year I had a week completely focused on burgers and this year…Nothing.

I’m disappointed in myself. Next year I will ABSOLUTELY make sure I have a burger week on the calendar!

Even though I didn’t have a “burger week,” this year be sure to look at the bottom of this post because I included 4 awesome burger recipes you’re gonna want to try. Maybe even feature this week at your 4th of July party. Including a Mahi Mahi Burger and a Burger with a Pineapple Relish that is to DIE for! Trust me!

As I was planning out the menu for our July 4th party I was going back and forth between … do I make burgers or change it up and grill bbq chicken. I kept coming back to the burgers … oh and Wisconsin Beer Brats. Because … well I gotta represent! (fist bump) But… needless to say it’s not summer without a big juicy burger! Am I right?

Today’s recipe is not your normal ground beef patty, as good as those are. Today we are making grilled portobello burgers for all those vegetarians out there. But honestly, even the meat eaters will enjoy this burger. The flavor from the avocado chimichurri totally livens up this sandwich.

The combo of the grilled onions, roasted red pepper and fresh spinach all on top of a “grill” toasted ciabatta bun will blow your mind! There is so much flavor going on with just a few simple REAL FOOD ingredients. No boxes. No mixes. No salt loaded seasoning blends. Just real ingredients.

Description

This grilled portobello mushroom burger recipe with spicy cilantro chimichurri is a 30-minute lunch that’s perfect for summer.


Ingredients

Scale
  • 4 portobello mushrooms
  • 1 tablespoon olive oil
  • 4 ciabatta buns, halved
  • 1 red pepper, whole
  • 1 red onion, sliced into 1/2” slices
  • 1 cup spinach
  • salt to season

Avocado Chimichurri:

  • 2 avocado, mashed
  • 1/4 cup fresh cilantro
  • 1 garlic clove, minced
  • 2 tablespoons lime juice
  • 1 tablespoon red wine vinegar
  • 1/4 teaspoon red pepper flakes
  • salt & pepper to taste

Instructions

  1. Preheat grill to medium high heat, about 375-400 degrees F.
  2. Scoop out insides of portobello mushrooms and remove the stem. (I like to use a spoon to scoop the insides out, it’s easier)
  3. Drizzle olive oil over the portobello mushrooms and red pepper. Season with salt.
  4. Spray grill grates with cooking spray or rub down with olive oil soaked rag.
  5. Place portobello mushrooms, whole red pepper and onion slices on grill.
  6. Grill portobello mushrooms for 4-5 minutes per side, the red pepper for 5-6 minutes per side and the onion slices for 3-4 minutes per side. Remove from grill and let rest.
  7. When red pepper has cooled down, slice it.
  8. Grill the inside of the ciabatta roll halves for 2 minutes, just to slightly toast them.
  9. In a small bowl add, avocado, cilantro, garlic, lime juice, red wine vinegar, red pepper flakes, salt and pepper. Mash together.
  10. Assemble burgers. To each ciabatta roll add 2 tablespoons of avocado chimichurri, 1/4 cup spinach, portobello burger, red pepper, and red onion.
  11. Serve.

    These sandwiches look PERFECT. I would even just take the bread and demolish it, but of course, I wouldn’t skip the mushrooms or avocados either! Perfect for any summer barbecue!
