The lyrics from the song, I am Who you Say I Am by Hillsong, has been in my head over the past week. The chorus of the song is so powerful to me. I think in this day in age, we have so many people (including ourselves) telling us “who” we are.

We are …. Successful. A Failure. Beautiful. Awkward. Shy. Smart. Heavy. Skinny. Powerful. Weak.

Words have the power of life and death. Whether you believe that or not. I can tell you for a fact that they make an impact.

I remember my freshman year of high school, sitting in my advanced english class. The teacher (who will be unnamed) would randomly call out names and have you read part of a story. Well that day, she called my name. Now, I consider myself a pretty good reader. But anybody gets nervous reading in public, after all you don’t want to mess it up right?

I was taking my time while reading the story and stumbled over a few words, but kept reading. After one of the words, she stops me and says. “Ugh, moving on because you can’t read it.” I was mortified.

What that told me was. I shouldn’t read in public. I’m not smart. I’m not fast enough. Therefore I should be nervous the next time I have to read in public.

All lies. But those words stuck with me and took me a while to shake off.

What am I saying?

Who have people told you that you are? Who have YOU told yourself that you are?

Over the years I’ve believed a lot of lies about myself. And I’ve also torn down a lot of lies and replaced them with truth.

I AM CHOSEN. NOT FORSAKEN. GOD IS FOR ME. NOT AGAINST ME. I AM WHO YOU SAY I AM.

Pray about it. Who does the Lord say you are?

He calls me beloved daughter. I love the term beloved, it’s intimate and gentle. I think of a daddy wrapping his arms around his daughter and whispering in her ear. I love that. I’m precious to him. His beloved daughter, whom he loves.

I absolutely love this song because it reminds me who I am, not who the world says I am or what the voices in my head tell me.

I’M A CHILD OF GOD. YES I AM.

I’ve actually been singing it to Maddie too. Every time I sing it, she lights up and kicks her legs with excitement. Ugh.. baby girl I pray that you hold to who the Lord tells you you are. Do not listen to the world or the voices in your head! Only listen to the Father.

On a side note… a food side note that is. Have I told you how excited I’ve been the past couple of weeks? I’ve been testing a lot of recipes as of late and really trying to focus on more Crock Pot and Instant Pot recipes. I don’t have a lot of my site and you guys have been asking for them! So here is the first one of the season.

If you like the flavors from my Thai Chicken Noodle Soup then you are going to love this dish! What I love about this recipe is, you literally throw everything in the Crock Pot raw and let is cook away.

There’s a lot of depth of flavor from the red curry paste, fresh ginger, and garlic but then a slight sweetness from the coconut milk. It’s all balanced out by the lime juice and fresh cilantro at the end. It’s absolutely delicious.

You could serve this over a bed of jasmine rice or you could just eat it plain, which is what I did. Make it low carb by subbing the potatoes for cauliflower!

Description

Crockpot Chicken Curry has never been easier! This crockpot chicken recipe is made with coconut milk & chicken breasts. An easy dinner idea you’ll love.


Ingredients

Scale
  • 1.5 lbs. boneless skinless chicken breast, cut into 1” cubes
  • 2 small potatoes, cubed
  • 4 carrots, cut into 1” chunks
  • 1 red pepper
  • 1/2 red onion, cubed
  • 2 cups low sodium chicken broth
  • 3 tablespoons red curry paste
  • 1 1/2 tablespoons fresh ginger, minced
  • 3 garlic cloves, minced
  • 1 can (13.5 oz.) coconut milk
  • 3 tablespoons arrowroot
  • juice of 1 lime
  • 1/3 cup fresh cilantro
  • 8 oz. snap peas
  • salt to taste

Instructions

  1. To a 7 qt Crock Pot add raw chicken, potatoes, carrots, red pepper and red onion.
  2. To a medium bowl add chicken broth, red curry paste, fresh ginger and garlic cloves. Whisk to mix everything together.
  3. Pour curry mixture into the crock pot. Stir the chicken and vegetables with a spoon so everything is coated with the curry mixture.
  4. Cover and cook on HIGH for 3 hours.
  5. Remove 3 tablespoons of the liquid from the crockpot and place in a small bowl. Mix with 3 tablespoons of arrowroot and pour the mixture into the crock pot. This will help thicken the sauce.
  6. Next add in coconut milk, lime juice, fresh cilantro, and snap peas. Stir to mix everything together. Salt to taste.
  7. Cook on HIGH for an additional 30-45 minutes.
  8. Serve as is or over a bed of jasmine rice.

Notes

** if you don’t have arrowroot you could use cornstarch as well.
