The Best Grilled Steak Kabob Recipe

I hope you’ve enjoyed grill week so far! I know I’ve enjoyed creating and eating the recipes! haha. Ok. Now, for the last day of “GRILL WEEK” I needed to finish with a bang, or in this case, a grilling staple that has a bomb of flavor. 

I can remember my mom making shish kabobs nonstop when the summer would come around. Not only it is super flavorful, but it’s also an easy way to make a meal that everyone will love. The grill does something magical to vegetables when they cook and miraculously your kids will eat them! I know I did as a child and my kids do too! In fact, my 7-year-old will straight up eat grilled onions from the grill, by themselves. It’s nuts!

What’s the difference between kebab and kabob?

Guess what. It’s essentially the same thing. Kebab is a Middle Eastern dish made with marinated meats (lamb, beef or fish) skewers together and grilled. Kabob is our American translation of saying Kebab but they are the same thing – chunks of meat grilled on a skewer. You say kebab I say kabob – who cares, let’s eat it! 

Some people call it Shish Kebab too, which is a Turkish dish that’s meat skewered with vegetables. But again, in the States we call it Shish Kabobs.

How to Marinate Steak Kabobs

  1. For a simple marinade: to a medium bowl add, olive oil, tamari sauce, worcestershire sauce, dijon mustard, fresh lemon juice, dry oregano, dry rosemary and pepper. Using a whisk, mix everything together.
  2. Add 2 lbs of meat to a large bowl or ziplock bag. Pour half of the marinade over the meat and toss to coat. Reserve remaining marinade for basting later.
  3. Let meat marinade for 30 minutes to 1 hour or overnight for maximum impact.

How to Grill Steak Kabobs

  1. Assemble kabobs: alternate red pepper, green pepper, red onion, meat, yukon potatoes (optional) and mushrooms on a skewer. Repeat. (I try to get 3-4 pieces of meat per skewer) Continue process until ingredients are gone.
  2. Heat grill to medium high heat, about 375-400 degrees F.
  3. Make sure that grill grates are clean. Spray grill grates with cooking spray or rub down with an olive oil soaked rag.
  4. Place steak kabobs directly on the grill. Grill each side for 4 minutes, you want a nice char. Basting the kabobs with remaining marinade while grilling. (this will leave you medium rare to medium steak) Remove the kabobs from grill and let rest for 5 minutes.
  5. Serve.

Tips for Success

Ok, so one of my tricks for getting the most flavorful tender steak kabobs is actually two-part: 

  1. Start with a good cut of meat: So, what’s the best type of steak for kabobs? Beef Tenderloin (Filet Mignon) is the best cut of meat to use in my opinion. But if you can’t afford that I’d go with either Ribeye or Top Sirloin.
  2. A Flavorful Marinade: infuse the meat with a flavorful marinade so you end with flavor! The marinade will also help tenderize the meat even more!

Can I Freeze Extras?

I’d recommend not freezing steak kabobs, the freezing process can dry out the cubed meat leaving you with tasteless dry meat when it’s time to cook it.

However you want to say it, just know that they are delicious! I think the kicker for this recipe is reserving half of the marinade and basting it on the kabobs as they are grilling. That last touch really seals in all the spices and gives you one last punch of flavor, especially for the vegetables!

Ingredients

Marinated Steak

  • 2 lbs. beef tenderloin (ribeye or top sirloin) cut into 2″ cubes
  • 1/4 cup olive oil
  • 2 tablespoons tamari sauce
  • 2 tablespoons worcestershire sauce
  • 2 tablespoons dijon mustard
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon dry oregano
  • 1 teaspoon dry rosemary
  • 1/2 teaspoon black pepper

Kabobs Ingredients:

  • 2 green peppers, cut into 1” cubes
  • 2 red peppers, cut into 1” cubes
  • 1 red onion, cut into 1” cubes
  • 1 lb. baby yukon potatoes, sliced in half
  • 1 pint of baby bella mushrooms

Instructions

  1. To a medium bowl add, olive oil, tamari sauce, worcestershire sauce, dijon mustard, fresh lemon juice, dry oregano, dry rosemary and pepper. Using a whisk, mix everything together.

  4. In the meantime, add potatoes in microwave safe container with 1/2 cup of water. Cover and cook on HIGH for 7 minutes to slightly cook potatoes. (should be able to pierce with a fork or knife)
