Easy Grilled Pineapple Recipe
Happy Birthday to me! Today I am officially 35 years old, which is weird to think about. Sometimes I still feel like I just graduated from college and got married. Now, I’ve been married for almost 13 years (which makes me a veteran) and have two kids. When did I get so old and grown up? I mean I pay a mortgage and stuff… I’m a big girl now.
The good news is I still feel like my body is for me and not against me. But it’s because I try to take care of myself and “fuel it” each day. More and more I’m starting to believe the phrase “Young at heart” is what reigns true when you’re 30 and up. Basically, you’re not defined by your number but more how you feel in your heart.

Since today is my birthday and I’m a sweet-aholic I HAVE to post a dessert recipe. Duh! After all, it’s not over till everyone’s had cake, or in this case GRILLED PINEAPPLE WITH COCONUT ICE CREAM!
Usually, chocolate cake is my jam but I’m really craving all things grilled and pineapple is my favorite fruit. So why not make a dessert on the grill using it! Right? (insert fist pump)
How to Make Grilled Pineapple?
- Preheat grill to medium heat, approximately 300-350 degrees F.
- Clean grates with a grill brush and rub grill grates with oil. (coconut oil, avocado oil or peanut oil)
- Place pineapple slices on grill and cook each side for 4-5 minutes, until you have grill marks and pineapple is slightly charred. (might even turn a more golden color)
- Remove from grill and serve.
What does grilled pineapple taste like?
The natural sugars from the pineapple come out when the pineapple is grilled, it creates a sort of crust and caramelization affect. Trust me, it’s absolutely delicious. The pineapple tastes like it has this mild citrus taste as well as intense sweetness from the pineapple itself. The texture of the pineapple softens as it’s grilled as well.
How to serve Grilled Pineapple?
Theres are a couple ways to serve grilled pineapple. Some people like to brush a brown butter sauce on it when grilling, you can soak them in rum and make a sort of pineapple fosters, others finish it with a brown sugar glaze. But today I’m going more tropical and topping it with a dairy free coconut milk ice cream and drizzling with a caramel sauce. The heat from the grilled pineapple will slightly melt the ice cream and it’s absolutely glorious!
How many calories are in grilled pineapple?
A grilled pineapple spear is just 50 calories and 13 grams of carbohydrates, so it makes a great low calorie dessert option. If you are the keto diet then the carbohydrates will be higher than you are allowed to have.
I know it’s not a cake, but it’s my kinda dessert! Light, easy (because it’s only 3 ingredients) and has all of my favorite things. Everything about this Grilled Pineapple Recipe gives me heart eyes. The warm pineapple combined with the creamy coconut milk ice cream that starts melting as soon as it hits the warm pineapple. YES!! But the finishing touch is that salted caramel sauce. Y’all. The combination is absolutely dreamy!

Ingredients
- 8 slices of pineapple
- 4 scoops of vanilla coconut milk ice cream
- 4 tablespoons caramel sauce topping
- optional: toasted coconut flakes and mint for garnish
Instructions
- Preheat grill to medium heat, approximately 300-350 degrees F.
- Clean grates with a grill brush and rub grill grates with oil. (coconut, avocado or peanut)
- Place pineapple slices on grill and cook each side for 4-5 minutes, until you have grill marks and pineapple is slightly charred.
- Remove from grill.
Assemble Dessert:
- To a plate add 2 slices of pineapple, 1 scoop of coconut ice cream and drizzle with caramel. (optional: garnish with toasted coconut flakes and mint)
- Serve immediately.
