Caprese Pizza with Balsamic Reduction

This margherita-style caprese pizza with melty mozzarella makes the perfect appetizer or quick dinner. Its crispy edges, sweet roasted tomatoes, and tangy balsamic reduction really take it to the next level.

What You’ll Need

Herby basil and tangy balsamic reduction add brightness to every bite. Scroll to the recipe card at the bottom of the post for exact amounts.

For the Roasted Tomatoes:

  • Cherry tomatoes – Avoid Roma and Heirloom tomatoes because they’re too meaty.
  • Olive oil – You can also use coconut, rapeseed, or avocado oil.
  • Salt – Kosher salt is best.

For the Pizzas:

  • Flatbread – Naan works too.
  • Garlic – Fresh garlic or garlic paste are best.
  • Olive oil – Avocado oil is a good swap.
  • Mozzarella cheese – Any melty cheese like cheddar, Muenster, or gouda can be used instead.
  • Fresh basil – Parsley is a great substitute.
  • Balsamic Reduction Try my recipe or use your favorite.

How To Make Caprese Flatbread Pizza

This 3-step caprese pizza is an effortless dinner option. Scroll to the bottom of the post for the full recipe card.

  • Roast the tomatoes. Preheat the oven to 400F. Place the tomatoes on a baking sheet. Drizzle them with olive oil and sprinkle them with salt. Bake them for 20 minutes or until they start to burst.
  • Assemble the pizzas. Reduce the heat to 350F. Place the flatbreads on the baking sheet. Drizzle with olive oil and sprinkle with garlic. Top each pizza with half of the cheese. Add roasted tomatoes on top.
  • Bake and serve. Pop the pizzas into the oven for 10 minutes, or until melty. Sprinkle with basil and drizzle with balsamic reduction. Serve and enjoy!

Tips & Variations

Changing the toppings to make BBQ and Greek-style pizza is even better than ordering in.

  • Add cold cuts. Top the pizza with mortadella, pepperoni, salami, or prosciutto for savoriness.
  • Use store-bought. Cut down on prep time by using store-bought roasted tomatoes and/or balsamic reduction for the pizza.
  • Make it BBQ-style. Swap the flavor profile by topping your pizza with leftover Honey Balsamic Pulled Pork, sharp cheddar, and your favorite BBQ sauce.
  • Add heat. Sprinkle the pizza with red pepper flakes, cayenne pepper, or chili oil to taste for a bit of heat. You can also add your favorite hot sauce, like Tabasco.
  • Go Greek. Chop up Mediterranean Chicken Kabobs leftovers. Sprinkle them over the flatbread and add mild cheddar. Once out of the oven, top it with crumbled feta and tzatziki sauce.
  • Swap the base. Toasted focaccia, halved baguettes, and sliced sourdough are great ways to throw this recipe together if you’re out of flatbread. Adjust the baking time as needed so that the bread doesn’t burn.

This Italian-style caprese pizza is an easy appetizer or main dish for dinner. Pair it with a side of my Wedge Salad with Blue Cheese Dressing or Simple Arugula Salad. How To Store Caprese Pizza

Keeping some in the freezer is a great way to beat your fast food cravings on any weeknight.

  • Fridge: Place it in an airtight container for up to 3 days.
  • Freezer: Store it whole or sliced. Wrap it in plastic wrap and transfer to freezer bags. Freeze for up to 3 months. Thaw overnight in the fridge or reheat straight from frozen.
  • To reheat it: Microwave it for up to a minute or until warm. If frozen, reheat it for 3-4 minutes. You can also heat it in the oven at 300F for 15-20 minutes.

Ingredients

For the Roasted Tomatoes:

  • 1 pint of grape tomatoes
  • 2 tablespoons of olive oil
  • salt

For the Pizzas:

  • 2 pieces of stonefire artisian flatbread or naan bread
  • 4 garlic cloves, minced
  • 3 tablespoons of olive oil
  • 8 oz. of fresh mozzarella cheese, sliced
  • 1/4 cup of basil, roughly chopped
  • Balsamic Reduction

Instructions

Roast Tomatoes:

  1. Preheat oven to 400ºF.
  2. Place tomatoes on a baking sheet and top with olive oil and salt.
  3. Bake for 20 minutes until tomatoes are roasted and burst.

Caprese Flatbreads:

  1. Reduce oven temperature to 350ºF.
  2. Place flatbreads on a baking sheet. Top each flatbread with olive oil. Evenly divide the minced garlic between the two pizzas.
  3. Top each flatbread with 4 oz. of freshly sliced mozzarella.
  4. Evenly distribute the roasted grape tomatoes on top of each flatbread.
  5. Place flatbreads in oven and bake for 10 minutes or until cheese is melted.
  6. Top each flatbread with fresh basil and drizzle with balsamic reduction.
