Vegan Stuffed Sweet Potatoes
If you follow me on Instagram, you know that Mike and I just finished a 3 day Juice Cleanse. All we had for three days was juice, water and the occasional coffee (because I can’t survive without coffee). It was absolutely great! I didn’t feel hungry, I felt energized and like some inflammation went away. But what I was looking for out of this cleanse was a “reset,” to not have cravings for sugar, carbs or alcohol. And it totally did the trick! I would definitely do it again, in fact I plan to do it again after the holidays.
After the cleanse one of the things I wanted to focus on is trying to fit more “vegan” meals in during the week. I think it’s good to give our bodies a rest from the hard work of digesting tough meat proteins. So that’s what todays recipe is all about, an easy vegan weeknight meal everyone is going to love.
What is the best way to cook Sweet Potatoes?
Two of my favorite ways to cook sweet potatoes are either in the microwave or the instant pot.
- For the Microwave: Wash sweet potatoes and make a couple of holes using a knife or fork around the sweet potato. Wrap sweet potato with a paper towel and cook on HIGH for 8 minutes in the microwave.
- For the Instant Pot: Wash sweet potatoes and make a couple of holes using a knife or fork around the sweet potato. Place steaming rack in the instant pot. Add 1 cup of water to the bottom and place prepared sweet potatoes on rack. Lock instant pot lid and set instant pot on pressure cooker mode for 15 minutes. Do a natural release.
How to make Stuffed Sweet Potatoes?
Stuffed Sweet Potatoes are very versatile. You can stuff them with whatever you’d like. The first step is cooking the sweet potatoes until they are fork tender on the inside. Slice them open and you’re ready to stuff. For a vegan stuffed sweet potato recipe:
- Heat a large skillet to medium high heat.
- Add avocado oil and onion to the pan. Saute the onion until they are translucent, about 2-3 minutes.
- Then immediately add garlic and red pepper. Saute for an additional 2-3 minutes.
- Add corn, black beans, fresh cilantro, cumin, smoked paprika and salt. Using a spoon mix to combine the ingredients and cook another 3 minutes. Remove from heat and set aside.
- Slice each cooked sweet potato in half, deep enough so that you can stuff them. Top each sweet potato with 1/2 cup of the black bean mixture, 1/4 cup fresh salsa and 2 tablespoons of guacamole.
Can you freeze Stuffed Sweet Potatoes?
Yes! You can freeze stuffed sweet potatoes. Cook the sweet potatoes and stuff them with your desired stuffing. Let cool completely, Wrap with plastic wrap and store in a freezer safe storage bag for up to 3 months. To reheat, place in a 400 degree F oven and bake for 15-20 minutes until warmed.
This Stuffed Sweet Potato recipe is so easy to make and the flavors are absolutely on point. There’s sweet, salty, creamy and spicy all in one bite. Even the pickiest of eaters will devour this one.

Ingredients
- 6 whole medium sweet potatoes, cooked
Black Bean Filling:
- 1 tablespoon avocado oil
- 1/2 cup diced red onion
- 1/2 cup diced red pepper
- 2 garlic cloves, minced
- 14 oz can low sodium black beans, drained and rinsed
- 1 cup frozen sweet corn
- 1/4 cup chopped fresh cilantro
- 2 teaspoons cumin
- 1 teaspoon smoked paprika
- 1/4 teaspoon salt
Fresh Salsa:
- 2 roma tomatoes, diced
- 2 tablespoons finely diced red onion
- 1 garlic clove, minced
- 1 tablespoons chopped fresh cilantro
- dash of salt
- juice of half lime
Guacamole:
- 2 large avocados, mashed
- 1 tablespoon lime juice
- dash of salt
Instructions
Black Bean Filling:

- To a small bowl, add avocado, lime juice and salt. Mash the avocado and mix together. Set aside.
Assemble the Stuff Sweet Potatoes:
- Slice each cooked sweet potato in half, deep enough so that you can stuff them. Top each sweet potato with 1/2 cup of the black bean mixture, 1/4 cup fresh salsa and 2 tablespoons of guacamole.
- Serve
