An Easy Chicken Parmesan Zucchini Boats Recipe
Growing up, Chicken Parmesan was my dinner of choice when we’d go to The Olive Garden. Now, I can’t remember the last time I went to the Olive Garden and have since found out that their Chicken Parmesan dish is 1060 calories PER SERVING. Holy Moly y’all! When I was a teenager that was fine, but now that I’m older those calories don’t just disappear like they use to!
So for today’s recipe I’m making a healthy take on that classic Italian dish everyone loves! And I’m doing it with a few simple swaps! Instead of breading and frying the chicken I saute it to give the chicken some night browning then simmer it in marinara sauce and add parmesan cheese to thicken it up and give the chicken that classic Chicken Parmesan taste. Instead of serving this lightened up Chicken Parmesan over pasta I scooped it into low carb zucchini boats and topped them with cheese. You’re going to love the flavors in this dish!
How to Make Stuffed Zucchini Boats
Stuffed Zucchini Boats are a great simple way to make something a little more low carb. To make the stuffed zucchini boats first you need to start with the boats. Slice the stem off the zucchini and then slice zucchini in half lengthwise. Using a spoon, scoop about 1/2″-1″ of the flesh out of the zucchini half – creating what looks like a boat. Place scooped out zucchini halves in a baking dish, flesh side up.
How to Make Easy Chicken Parmesan
- Heat a large skillet to medium high heat. Add avocado oil and diced red onion. Saute until translucent, about 2 minutes.
- Add in cubed chicken breast. Saute until cooked, stirring throughout, approximately 4 minutes.
- Then pour pasta sauce over chicken and add parmesan cheese. Bring to a slow simmer. Remove from heat.
- In a 13×9 inch baking dish, add zucchini boats flesh side facing up. Scoop the parmesan chicken mixture into the “boat” part of the zucchini.
- Sprinkle with shredded mozzarella cheese.
- Bake uncovered for 20 minutes.
- Garnish with fresh basil. Serve.
Can Chicken Parmesan Be Frozen?
Yes, the Chicken Parmesan part of this dish can be frozen. I would recommend making the chicken and the sauce, then placing it in a freezer safe storage bag. Can be stored in the freezer for up to 6 months. When you are ready to make this dish, just remove the Chicken Parmesan from the freezer and thaw. Scoop contents out of the bag and into the zucchini boats then continue to follow the directions below for baking times and temperatures.

It was hands down the most comfort food-y zucchini boat recipe I have made. And honestly, it really does taste like Chicken Parmesan. Ingredients
- 3 large zucchini, halved and scooped out
- 1 cup shredded mozzarella cheese
- garnish: chopped fresh basil
Chicken Parmesan:
- 1 tablespoon avocado oil
- 1/2 cup diced red onion
- 1 lb. boneless skinless chicken breast, cut into 1/2” cubes
- 1 1/2 cups Muir Glen tomato basil pasta sauce
- 1/4 cup grated parmesan cheese
Instructions
- Preheat oven to 350 degrees F.

I always struggle to get my kids to eat zucchini. They will eat a little bit, but they’re not happy about it & making zucchini noodles is one of my least favorite things to do. This chicken parm zucchini boat recipe, however, has changed things for the better. My 9-year-old declares it “the best zucchini recipe I’ve ever had”! That’s all I needed to hear! I can’t wait to try some of the others!
