Hawaiian Chicken in Foil Packets
Well, if I can’t go to Hawaii at least I’ll cook like them to make me feel like I’m there. When I think of Hawaii, I think of fresh light meals that are grilled and covered in a sweet tangy sauce of some sort with pineapple in the mix somewhere. And that is exactly what this recipe is!

What is Hawaiian Chicken?
Hawaiian Chicken is kinda like sweet and sour chicken. It has a sweet sticky sauce that’s tossed with chicken, chunks of sweet pineapple, peppers and onions. Normally it is served over white rice. I took that classic and made a BBQ baby out of it by tweaking the sauce and making it a Hawaiian BBQ Sauce. Then slathered it all over a whole chicken breast, fresh summer veggies and slices of pineapple and threw it on the grill in a foil packet. You’re going to love my twist on Hawaiian Chicken!
How to Make a Hawaiian BBQ Sauce
There’s not a sure-fire way to make a Hawaiian marinade. I think it depends on what flavors you think of when you think of Hawaiian. For me it’s always pineapple and soy sauce. Think sweet and salty. Here are the ingredients you’ll need to make this Hawaiian BBQ Sauce.
- BBQ Sauce:
- Pineapple Juice:
- Tamari Sauce (or soy sauce):
- Garlic:
- Clove:
- Smoked Paprika:
What Does Hawaiian BBQ Sauce Taste Like?
Hawaiian BBQ Sauce has all the same flavor profiles of BBQ sauce but with a sweet tangy flavor from the pineapple combined with a salty hint from the soy sauce or tamari sauce. It has the umami thing going on for sure! You’re going to love it!
How to Make Hawaiian Chicken in Foil Packets
The thing I love the most about this recipe is that it is made in a foil packet. I’d recommend making the tin foil sheets at least a foot long so that you have room to wrap without running out of tin foil. I’d also recommend having a meat thermometer on hand so you can easily check the temperature of your chicken to make sure it reaches doneness of 165°F.
- Heat grill to medium high heat, about 375-400°F.
- To a small bowl add BBQ sauce, pineapple juice, tamari sauce, smoked paprika, ground clove and garlic, Whisk together.
- Lay out 4 sheets of heavy-duty tin foil, enough to wrap the chicken and veggies. (I did about 1 foot long) Place chicken in the center of tin foil and then divide the veggies and pineapple slices evenly into each packet.
- Brush the chicken with half the Hawaiian BBQ sauce. (make sure to separate the mixture if you are using a brush, don’t want to dip the brush into the marinade and then onto the raw chicken, no bueno)
- Close up the tin foil around the chicken and veggies to create a packet.
- Place tin foil packets on grill and grill for 13-15 minutes or until internal temperature of the chicken is 165°F.
- Remove from grill and let rest. When ready to serve, brush chicken and veggies with remaining sauce, garnish with chopped green onions and parsley.

- 4 boneless skinless chicken breast
- salt & pepper
- 1 red pepper, cut into large cubes
- 1 zucchini, cut into 1/2” slices
- 1/2 red onion, cut into large cubes
- 8 pineapple slices (fresh or canned)
- 1/4 cup sliced green onion
- optional: chopped parsley to garnish

- 1/2 cup favorite bbq sauce (I used Stubbs BBQ)
- 1/4 cup pineapple juice
- 2 tablespoons tamari (or soy sauce)
