Thai Chicken Peanut Noodles
Do you ever just need to get a kick in the pants to get off the “Negative Nancy” train? I do. Yesterday my husband and I went out on a little date night. I was super excited about the new year, setting goals, and just talking them through with my husband. But then… those thoughts come on.
Last year, you set a goal to pray with your husband and you didn’t do it. You also set a goal to wake up in the mornings and read your Bible, you didn’t do that consistently. Oh, and what about this and that.
By the time I realize it I’m discouraged and then not sure what goals to set.
Good thing I have a husband who gave me the kick in the pants I needed to get back on track. He said, “It’s a new year, a new slate, the past does not dictate what you can or will do in your future.” AMEN!! So.. all that to say… back to setting goals with confidence, anticipation, and excitement! And, very thankful for an amazing husband who knows how to speak life and encouragement to me when I need it!
Speaking of husbands, today is Real Men Cook day. A day {the 1st Friday of every month}, dedicated to give our men recipes easy enough to make so that mom can have a night off! Yeah for that, right ladies! 🙂 Last month, our recipe for Real Men Cook was Dark Chocolate Chip Mint Cookies, so I guess that would be Real Men Bake.
This month we are going back to cooking and boy is this one amazing. If there are any Thai Food fans out there then this is the recipe for you! There is crunchy from the fresh vegetables, protein from the chicken, grains from the pasta, a slight peanut hint with a zesty lime flavor and some heat from the red pepper flakes. The ultimate light and easy dish for all those hubbies out there!
How to Make Thai Chicken Peanut Noodles
To get started, chop up 1 cup pre-cooked chicken and set aside.
Next, get your veggies ready and julienne 1 red pepper and slice 1/4 cup of green onions. Set aside.
In a small bowl, mix together 4 Tablespoons of reduced fat peanut butter, 6 Tablespoons of fresh lime juice, 3 Tablespoons of low sodium soy sauce, 2 Tablespoons of brown sugar, 1/4 cup of chopped fresh cilantro, 1/4 cup of chopped fresh basil, 1/2 teaspoon of ground ginger, and 1/4 teaspoon of red pepper flakes. Whisk until smooth.
Bring a large stockpot of water to a boil, throw 1 lb. of whole wheat spaghetti in water and cook until al dente. {about 8-10 minutes}
Drain water and toss in cooked chicken, red pepper, green onions, and peanut sauce with pasta. Toss to coat. Garnish with sesame seeds.

- 1 lb. of whole wheat spaghetti
- 1 cup of cooked chicken, chopped
- 1 red pepper, julienned
- 1/2 cup of green onions, sliced
Sauce:
- 4 Tablespoons of peanut butter, reduced fat natural
- 6 Tablespoons of fresh lime juice
- 3 Tablespoons of low sodium soy sauce
- 2 Tablespoons of brown sugar
- 1/4 cup of basil, chopped
- 1/4 cup of cilantro, chopped
- 1/2 teaspoon of ground ginger
- 1/4 teaspoon of red pepper flakes
- sesame seeds for garnish
Instructions
