The Most Delicious Honey Glazed Carrots

These Honey Glazed Carrots are sweet, savory and roasted to perfection in the oven. It’s a great family-friendly (and healthy!) side dish.

We love to serve these alongside my Whole Roasted Chicken or Whole30 Baked Salmon in Garlic Cream Sauce.

The Best Honey Glazed Carrots

Ok, so if you’ve been coming here for recipes for a while you know that I am absolutely in love with roasted vegetables. Mustard Balsamic Chicken with Roasted Vegetables, Roasted Tomato Caprese Pasta, Roasted Sweet Potato & Butternut Squash Hash, and Roasted Red Pepper Hummus are just a few of my favorites! These Honey Glazed Carrots are right up there, too.

When you toss the carrots with honey and roast them in the oven they turn into sweet caramelized goodness! And who doesn’t want to eat that?! It’s a tasty and healthy way to enjoy vegetables.

Plus, it’s kid-friendly. My kids eat these right up whenever I make them! There’s no complaining and they are enjoying healthy, fiber-filled food!

Are Glazed Carrots the Same as Candied Carrots?

You might be wondering if these glazed carrots are the same as candied carrots (a.k.a. caramelized carrots). In a way, yes they are a little similar. All of the recipes use a sweetener for flavor and to showcase the natural flavor of the carrots. But this Honey Glazed Carrot recipe is a bit different. Here’s why:

  • Honey Glazed Carrots are Paleo-friendly. This is because a natural sweetener (honey) is used and not granulated or brown sugar. Usually, to make candied carrots you use regular sugar or brown sugar.
  • Candied Carrots are typically boiled and not roasted. This recipe calls for roasting the carrots, which also brings out the natural sweetness of the root vegetable. (And allows you to use less sweetener to keep it healthy.)

Recipe Ingredients

Listed below are the ingredients that you need to make Honey Glazed Carrots. Fortunately, most of the ingredients are probably already in your kitchen!

  • Carrots: You can use any carrots that you’d like! I love using fresh organic carrots right after their harvesting season. But you could also use baby carrots or even tri-colored carrots.
  • Olive Oil: Avocado or sunflower oil could also be used.
  • Raw Honey: Honey is the key ingredient to get the caramelized flavor. You could also use maple syrup and it will still be paleo-friendly.
  • Fresh Thyme: I love the way that thyme and carrots pair together! Plus, you could also try some other heartier herbs like sage or rosemary. Try to use fresh herbs for the best flavor.
  • Garlic: Garlic is another ingredient that thrives when it’s caramelized and has a little sweetness. The garlic adds a burst of flavor but it’s not bitter at all. Honestly, add more garlic if you love the flavor! There’s no harm there at all.
  • Salt and Pepper
  • Fresh Parsley (Optional Garnish): You could also use fresh chives as a garnish, too.

How to Make Honey Glazed Carrots

Here’s how to make this delicious carrot side dish. It’s just a few steps and then they go right in the oven!

  • To get started, preheat the oven to 400F. Then Peel 2 lbs. of carrots and cut off the stems. Next, cut the carrots into 1 1/2″ chunks.
  • Now you can make the honey glaze. Pour the olive oil, honey, garlic, salt and pepper into a bowl and mix together.
  • Toss the carrots with the honey glaze. Make sure that the carrots are evenly coated!
  • Spread carrots out on a baking sheet. It’s important to be sure they are in a single layer and not stacked on each other.
  • Lastly, bake for 30 minutes. Remove the carrots from the oven and let them cool for a few minutes before serving. Garnish with the fresh chopped parsley if you’d like.

Tips for Success

This recipe is very straightforward, which is why it’s such a hit around here! Here are a few simple tips to keep in mind so that you’re successful in the kitchen.

  • Cut the carrots to be the same size. This will ensure that they cook evenly and require the same amount of time.
  • Make sure the honey is liquified. Sometimes honey can become hard or crystalize in the bottle. To fix this you can run it under some hot water to make sure that it’s nice and smooth for making the honey glaze.
  • Always lay the carrots flat on the tray and do not stack them. The carrots will not roast evenly if they are stacked on top of one another.

Serving Suggestions

These Honey Glazed Carrots are the perfect side dish that will please just about anyone! Here are some of my favorite dishes to serve with these carrots.

Can You Make Glazed Carrots Ahead of Time?

Yes, you can certainly make these carrots ahead of time. While the best flavor is going to be fresh out of the oven, there is no harm in reheating them.

Simply store the cooked carrots in an airtight container in the fridge. Then I suggest reheating in a large skillet with a little bit of butter or oil. If you reheat them in the oven the carrots run the risk of burning or drying out.

How to Store & Reheat

As mentioned above, it’s best to store any leftovers in an airtight container in the fridge. The dish will stay fresh in the fridge for up to 5 days.

Then when you’re ready to reheat, you can do so on the stovetop for the best results.

  2. Wow, just wanted to say thank you. I now look at those roasted carrots and they look so yummy. My two sons would love this – I’m gonna prepare it on weekends. I love your recipes!

  3. Hey Krista,
The recipe and photos seem interesting and yummy. I am a huge fan of roasted vegetables but I’ve never roasted carrots :)) I have to give it a try ASAP!!! Thanks for sharing
Now I will also share this post to my Facebook page of single moms.

  4. I was not a big fan of this recipe – maybe too much sage? Something just didn’t taste right with all the flavors mixed together. I had to use another sauce to be able to use the meat instead of throwing it.

But…I did LOVE the carrots. THANK YOU!!! 🙂

  5. I am a bit late to the game here, but I found this recipe on Pinterest a few months ago and finally just got around to making it for a healthy late-night snack. It was so delicious and I ate it so quickly that I wish I had made more! I only used one carrot since I was just feeding myself, but I think next time I’ll go for two. ;P Thanks so much for the recipe!

    1. Hey better late than never right! 🙂 Definitely do two next time, so glad you enjoyed the recipe Jen! AND thanks for giving me your feedback, always love to hear it. {good or bad :)}

  6. Hello, I was just wondering, could I cheat and take the easy way out and just use a bag of baby carrots? If yes is there any adjustments I need to make? Thanks 🙂

  7. I’m not a big fan of carrots like this. The only way that I enjoy them is raw in salad or in Yakisoba. But these carrots on the pics look good! 😀

    1. Hey Carol,
Paleo is a way of eating that is grain free, sugar free, dairy free, caffeine free, and legume free. The concept is to eat the way cavemen use to, so sometimes they also call paleo eating “primal eating”. Just depends. Hope that helps. 🙂

I’ve never had carrots this way, but they look delicious! I don’t think of “veggies” and “sweet” in the same sentence, but maybe I need to change that!

    1. Oh.. you need to try it! They are delicious! Carrots have alot of natural sugars in them to start with, but after roasting them oh la la! They are good! 🙂 Thanks for stopping by Amy!

Hope your SITS day is going well! I’ve always been interested in the Paleo diet. I think it is definitely one of the most healthy for sure! How our bodies were designed to work.

    1. Exactly! I can definitely tell a difference, not a “bloated” from the dairy. Thats for sure. But definitely tired because of the lack of sugar. You should try it for a week and see what you think. I’m actually thinking about continuing it after the fast. 🙂 Thanks for stopping by Bonnie!

  22. This looks delicious. I’m always looking for new ways to make veggies. I will definitely be trying this!

    1. Thanks Lauren, you can do this with just about anything and it will be awesome. Love roasted vegetables! 🙂 Thanks for stopping by and the sweet comment! Hope you have a great rest of the day!

Hi Krista, stopping by from the SITSgirls. These look delicious! And since my 2 little girls have decided that carrots are about the only veges they will eat, I’ll definitely be trying these soon. Thanks for sharing 🙂
PS- I love your blog design, did you use a theme or do it yourself?

    1. Oh, thanks so much Meg! I started by doing it myself with Thesis and making my own header and such in picmonkey {great tool fyi!} But I recently got it redone by a professional designer {mommyblogdesigns} There is a button on my side bar if you are interested in having her do it. If not, somethingswanky.com has some great tutorials on picmonkey or I can totally help you! 🙂

Hope your girls love the dish, but if carrots are their favorite, I’m sure they will!

  24. Happy SITS Day! I hope it is a great one for you!

I’ve had honey-glazed carrots before and, though I don’t normally like sweet veggies, I did thoroughly enjoy them! 🙂 Yours sound great!

    1. Thanks Julie!

They are definitely a sweet treat when it comes to veggies. Those and sweet potatoes are one of the first things I gave my son to get use to “real food” and it worked like a charm. He still loves them today. 🙂 This are perfect with a nice salty main dish!

    1. Its true, carrots are good in general! But caramelized… yum!!! 🙂 Thanks for stopping by Eric, have a great rest of the day!

    1. haha… sexy.. that is a new word for carrots. But I LOVE it!!! Totally made my day with that comment.

  30. I’m pinning these FOR SURE. I love roasted veggies too and make them very often. They are just so quick, easy, and delicious. One veggie that I am not a fan of is carrots, but I know they are so great for you so I definitely want to try to eat more of them and this is a perfect start. I’m actually making a carrot cake this weekend and to balance the poor eating, I’ll try this recipe too! 🙂

    1. Jennifer, I’m actually not a fan of raw carrots either. When they are cooked down in a sauce or roasted in the oven though the sweetness comes out and its delicious! Hope you give them another chance, and if you could send me a piece of your carrot cake too I’d appreciate it! 🙂 hehe
