Add brown rice noodles to a pot of boiling water & cook for 4 minutes. Remove noodles from pot, drain, and immediately place noodles in an ice bath.
Heat a large dutch oven or soup pot to medium-high heat and add the coconut oil.
Add red onions, saute until translucent. Next, add garlic & ginger. Saute until fragrant. Add red curry paste, and stir the paste until it thickens.
Add in chicken broth and bring to a boil, then reduce to a simmer. Next, add fresh veggies, chicken, & noodles.
Add1 cup of broth to blender, along with coconut milk. Blend until the mixture is creamy.
Add the coconut milk mixture back to the soup pot, stir, & simmer for 5 min.
Right before you’re about to serve the soup, finish with fresh lime juice and fresh cilantro. Optional slices of avocado and green onions.
