Avocado Goat Cheese Sandwich
Ok, true confession! I am writing this post in the car on the way back from San Antonio.
Why you ask? Well, because we are driving back from GAME 7 of the San Antonio Spurs/Dallas Mavericks.. which by the way Spurs won!! Woot Woot.
Do you consider yourself to be a spontaneous person? If not, do you wish you were?
I am very much a type A personality. I don’t like a lot of change, I like things the way I like them and thats that. I like to have things planned out in advance so I know what to expect. If things come at me spontaneously I’m all thrown off my game.
Enter crazy story….
Its 7pm Saturday night, I just got back from “gettin my hair did” at Ulta, Mike looks at me and says. “Hey wanna go to San Antonio for the spurs game tomorrow?”
Whenever he asks questions like that my immediate response is no, if its less than 24 hours notice. Because… well.. we need to plan! {i know.. i’m ridiculous}
But I was feeling oh.. I don’t know… crazy. We had a little bit of discussion about if its in the budget, who’s going to watch the dog, what do we do with cason etc.? And decided.. what the heck.. we are rarely spontaneous like that anymore.
We packed everything up and were on the road in 30 minutes driving to San Antonio.
I know.. I’m seriously in shock I did it too but it was so fun.
So, that is why I am writing this post in the car… I feel like I’m living on the edge. 🙂 baha.. I’m so pathetic if thats living on the edge.
Ok, I might be pathetic but this Mashed Avocado Goat Cheese Sandwich is not. In fact, its anything but pathetic, in fact its totally going to rock your socks off!
If you’ve been around here a while you know that I am obsessed with using three things.. avocado.. goat cheese.. and roasted tomatoes. Well, I finally came to my senses and put these powerhouse flavors together into one amazing open faced sandwich.
It is seriously the perfect quick lunch. I made the roasted cherry tomatoes the day before so literally all I had to do for lunch was toast the bread and mash the avocado. I promise if you bring this sandwich to work people will think you are a gourmet chef because of beautiful looks. The best is, only you will know how easy it is and get to chow down on it while everyone else eats there lean cuisine or progresso soup!

Description
This Avocado Goat Cheese Sandwich is a healthy, open-faced sandwich option with tangy goat cheese, creamy avocado, roasted cherry tomatoes and buckwheat sprouts. It’s delicious!
Ingredients
- 1 slice of 12 grain bread
- 1 avocado, mashed
- 1 tablespoon of goat cheese
- 1/4 cup of roasted cherry tomatoes
- 1/2 cup of buckwheat sprouts
Instructions
- Preheat oven to 400.
- Place 1 pint of cherry tomatoes on a baking sheet and season with 1 tablespoon of olive oil and salt.
- Roast for 20 minutes. Remove and let sit.
- Toast 1 piece of 12 grain or multigrain bread.
- Remove and promptly spread 1 tablespoon of goat cheese on toast.
- Top with 1 mashed avocado, 1/4 cup of roasted tomatoes, and a 1/2 cup of buckwheat sprouts.
- Chow down!

I am so darn spontaneous it ain’t even funny! Well, maybe it is. I love change and get bored with the same ole same ole stuff. But at the same time, I do like to plan vacations and stuff like that because I need to get what the heck is going to go on planned out in my head!
