Chicken Sausage Pepper Potato Hash
Ok, so I know this might be strange since I have been blogging for a little over a year now, but I really struggle with my “blog voice”.
Meaning, should I be funny, should I just talk about and the nutritional value, should I share whats on my heart and be serious…..
So far I’ve done basically all of these but I don’t know if you enjoy it?
The truth is I am all of these things so I can’t just stick to one and go with it. I usually just speak whats on my mind and heart in the moment, for good or bad.
What kind of blog personalities do you enjoy reading? Or better yet, what keeps you coming back for more?
I think I kinda run that gamet. I read AHHHH-LOT of food blogs… {gasp.. shocker I know}! Most of them are blogs where the author is just talking about whats on their mind for the day or what has been going on that week. {almost like a reality tv show but in written form} But some of my favorites are the ones who crack me up the entire time I’m reading so I have no choice but to scroll down to the bottom because I’m addicted.

Br-inner! Yup, you heard me right! Br-inner was a term that a friend of mine used the other day. What is Br-inner?
It’s breakfast food for dinner! Because lets be honest, breakfast food is good any time of the day but at dinner it morphs into this glorious heavenly meal that would have never tasted the same way if you had it for breakfast that morning.
Breakfast for dinner is one of my favorite things the make. It’s quick, it’s easy and it’s always a hit.
Who doesn’t like pancakes or waffles?
Well, today we aren’t going the pancake route. Instead we are going to potato hash!
Guys, these potatoes are crispy on the outside, soft in the center then combined with sweet bell peppers and spicy chicken sausage. Absolutely perfect! Then topped off with an egg to bring the whole dish together, if you so choose.
So so yummy, done in 30 minutes and its even gluten free. Um… Win! 🙂

Description
This Chicken Sausage Pepper Potato Hash is a quick and easy potato hash made with crispy red & yellow bell peppers. It’s perfect for breakfast, dinner or anything in between!
Ingredients
- 1 lb. of chicken sausage, sliced
- 2 tablespoons of coconut oil
- 5 large russet potatoes, small dices {about 3–4 cups}
- 1 red bell pepper, diced
- 1 cup of red onion, diced
- salt & pepper
- optional, serve with an over easy egg
Instructions
- Heat a large non-stick skillet to medium high heat.
- Add chicken sausage to the pan, saute for 6-8 minutes. Until sausage is browned.
- Remove chicken sausage from the pan and put on a plate and place skillet back on burner.
- Add coconut oil to pan, once melted add diced potatoes.
- Saute for 15-17 minutes, until potatoes are slightly browned. Season with salt & pepper.
- Add peppers and onions to the pan, saute another 3-4 minutes.
- Add in chicken sausage toss and serve.
- {you can serve as is, or with an over easy egg on top}
