- Brussels sprouts – Cut these in half and trim them. If they’re especially large, you can cut them into quarters.
- Olive oil
- Balsamic vinegar – Use a good one! Thick and syrupy is best.
- Honey
- Tamari – Or soy sauce or coconut aminos.
- Garlic – Because honey and garlic are meant to be together.
- Salt and pepper
How to Make Honey Balsamic Brussels Sprouts

- Mix the sauce. Whisk together all of the ingredients and reserve a tablespoon for later.
- Season the sprouts. Toss the Brussels sprouts with the sauce.
- Roast. Transfer the Brussels sprouts to a parchment-lined sheet pan and bake for 20 to 25 minutes, or until they’re golden and the outer leaves are crispy.
- Finish. Toss with the remaining sauce and serve.
Tips and Variation Ideas
Here are a few pointers to help you make sure your roasted honey balsamic Brussels sprouts turn out perfect.
- Roast them cut-side-down. This gives you a nice, even layer of browning and caramelization on the Brussels sprouts.
- Use fresh Brussels sprouts. Don’t substitute frozen! They just don’t get as crispy and delicious as fresh, even when roasted.
- Give them some heat. Red pepper flakes or chili crisp will add a little spice to your honey balsamic Brussels sprouts.

How to Store and Reheat Extras
- Refrigerator: Store leftovers in an airtight container in the refrigerator for up to 3 days. (While you can freeze leftovers, I don’t recommend it because they’ll be mushy when you thaw and reheat them.)
- Reheating: You can eat these honey balsamic Brussels sprouts without reheating them (they’re great in this Harvest Steak Salad with Apple Cider Vinaigrette), or you can warm them up in a 400ºF oven or the air fryer to re-crisp them. The microwave works too.

Ingredients
- 1lb. of brussels sprouts, halved and trimmed
- 1 tablespoon of olive oil
- 1/4 cup of balsamic vinegar
- 2 tablespoons of honey
- 1/2 tablespoon of tamari (or soy sauce)
- 1 teaspoon minced garlic
- salt and pepper to season
Instructions
- Preheat oven to 400°F.
- To a large bowl add brussels sprouts, olive oil, balsamic vinegar, honey, tamari sauce, garlic clove, salt and pepper. Reserve about 1 tablespoon of the mixture.
- Add brussel sprouts to a bowl, pour the honey balsamic mixture over top. Toss with a spoon to coat all of the Brussels sprouts.
- Lay Brussels sprouts out on a parchment paper lined baking sheet cut side down (flat side) and bake for 20 – 25 minutes.
- Remove from oven and drizzle with remaining sauce. Serve.
