Ok, so as we speak I have almost had an epic fail in dessertland!
I don’t make homemade ice cream too often, but I decided to try it out today. So I made the ice cream base, turned the ice cream machine on, let it run for thirty minutes, came to see how it was looking and …. liquid. Not even a shred of remotely looking like ice cream!
For whatever reason the ice cream machine wasn’t churning properly. I had a mild freak out moment and thought.. “oh no I hope I don’t need to throw this whole thing out. I need to photograph it later today!”
I decided to take a deep breathe, scraped the sides of the ice cream bowl, put it back together, turned it on.
Viola! Churning ice cream! Happy Dance!!!

I might have had ice cream issues today but there was absolutely no issues with these Mini Apple Pie Tartlets. I mean really, Apple Pie + issues? Just does not exist! At least not in my book!
This idea came about after I had a purchased a big old bag of granny smith apples at ALDI’s. I was intending to make apple pie ice cream but… you know what happens when you make plans or have the best of intentions. They usually don’t happen. Why is that?
I knew I needed to use up the bag soon or they would go bad, and I just so happen to come into a free tub of pre-made Pillsbury Pie Dough… score!
So Mini Apple Pie Tartlets is was. Personally I always love a little crunch or texture in everything I eat so I added the pecan streusel topping for good measure. 🙂
Now, if you really want to take this dish to the next level. Top it with some speckled Vanilla Bean Ice Cream and a warm caramel drizzle…. heaven!
Go Big or Go Home!
I “went home” on this dish when I ate it because I didn’t have either of those two items… luckily it was still divine and packed with flavor.
Speaking of home! I’m also going “HOME” this week, “home” as in .. to the Midwest. I seriously can’t wait to go back to cooler weather, changing leaves, and scarf and boot attire
Ok, so beyond the whole weather thing I’m also pumped because I get to visit the ALDI’s Test Kitchen on this trip and guess what? Its gonna be all about what to make for the Holidays! They are going to bring in some foodie experts to show us the kind of recipes that ALDI is bringing to the table this year, along as answer any questions we might have.
So … here’s my question to you?
Do you have anything that you want to know as you prepare for the holiday months? Like, which wines to pair with what? What are the latest food trends for Thanksgiving? Appetizers pre-turkey.. yah or nah?
Anything! I want to hear it and will totally bring it with me to ask.
Ok, back to the Mini Apple Pie Tarlets {man I feel like I’m all over the place today… ice cream, apple pie, ALDI’s and back to apple pie … if you’ve stuck with me thus far you deserve a metal:)}
They are awesome and you must try them. Not only are they super easy to make, they have just the right amount of sweet, a little crunch, amazing fall flavors, and built in portion control.

Description
Mini Apple Pie Tartlets topped with a crunchy sweet Pecan Streusel, the best fall baking recipe around with built in portion control… cuz they’re mini duh! 🙂
Ingredients
- 1 15.8 oz. tub of Pre-made Pie & Pastry Dough
Cinnamon Apples:
- 4 granny smith apples, peeled and sliced
- 1 teaspoon of cinnamon
- 1/4 teaspoon of nutmeg
- pinch of salt
- 1/4 cup of brown sugar
- 2 tablespoons of water
Pecan Streusel:
- 1/2 cup of pecans, finely chopped
- 1/4 cup of white whole wheat flour
- 1/4 cup of white sugar
- 1/4 cup of brown sugar
- 1 teaspoon of cinnamon
- 4 tablespoons of butter, melted
Instructions
- Preheat oven to 425.
- Spray 5 mini tart tins with Pam.
- Roll out pie dough on a counter, cut out circles and place each circle over the sprayed tartlet tin and press dough down on the bottom and sides.
- In a large bowl, add granny smith slices, cinnamon, nutmeg, pinch of salt, brown sugar, and water. Toss to coat.
- Evenly spread cinnamon apple mixture amongst the 5 tartlet tins.
- In a small bowl, combine chopped pecans, cinnamon, sugar, brown sugar, and butter. Stir till all combined.
- Sprinkle pecan streusel over each tartlet tin.
- Place tartlets on a baking sheet {this will help catch any spill over}
- Bake for 18-20 minutes, or until dough is slightly browned.
