Roasted Vegetable Hummus Wraps
Sometimes there are just too many things to think about! Do you ever feel like that?
Too many ways to do something, too many things to do in one day, too many goals I could set for myself, and too many ways to reach those goal.
If I really sit and think of all the possibilities is it exhausting.
The same is true of parenting. As soon as you hold your child in your arms for the first time you want the world for them. You want them to reach all their dreams, to be able to adapt smoothly into society, to be a person of honor, character, loyalty, and honesty. But again the ways as a parent to help your child get there are endless.
When I was on the plane on our way back from Colorado I had a rare chance to read a little bit which was absolutely amazing! I only ended up reading a few pages but it was something that made me think and I wanted to share it with you. {its an excerpt from Grace Based Parenting by Dr. Tim Kimmel}
“I was aware of kids in the group struggling with drugs, premarital sex, and with serious rebellion. But you couldn’t tell who they were by looking at hem. More important, they were there in church – the hospital that God left behind for them. They were the very kinds of kids I wanted to see in our youth group, rubbing shoulders with young people serious about their faith. Youth ministries reach out and minister to all kinds of young people I wanted my kids to reach out to. But Tom was one of those types of parents who wanted to raise “safe” kids. My wife and I would rather raise “strong’ kids, and a grace-based environment makes that easier to accomplish.”
As I read this, something in me was struck. I never want to raise Cason in a bubble but at the same time society these days scares me and if I’m honest with myself I probably make decisions out of fear so that he is “safe.” I don’t want to raise a “safe” child I want to raise a “strong” child. A child who can look the problems of society in the face and not cave but stand his ground, who will spend time with those that are hurting or acting out and love them in the midst of it!

Description
These Roasted Vegetable Hummus Wraps are the easiest and most satisfying lunch you’ll ever make! They’re stuffed with a melody of vegetables and homemade roasted garlic hummus!
Ingredients
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red pepper, cut into 1” cubes
- half a red onion, cut into 1” cubes
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- 2 cups of fresh spinach
- 8 whole wheat tortillas
- Roasted Garlic White Bean Hummus
Instructions
- Make Roasted Garlic White Bean Hummus, set aside.
- Preheat the oven to 400 degrees.
- In a large bowl add the cut zucchini, yellow squash, red peppers, and red onion. Season with olive oil, salt and pepper. Toss to season everything.
- On a baking sheet, spread out the vegetables and bake for 20 minutes.
- Assemble wraps: add 2-3 tablespoons of hummus, 1/2 cup of roasted vegetables, and 1/4 cup of fresh spinach to tortilla and roll up.
- Serve!

It is definitely difficult not to make parenting decisions out of fear, especially considering today’s society. I have to keep telling myself that my two boys will be more likely to make good decision for themselves in the future if my husband and I live our lives strongly and provide that role model for them. Fingers crossed that it’s true! 🙂 These wrap look wonderful…something I could happily eat every day.
Exactly! I really think alot of it has to do with the things they see lived out in their home, if its good there they will feel more secure and be more likely to make good decisions later on down the road. 🙂
