I think I’ve gotten away from the heart of why I blog.
Ever since I got pregnant I’ve been in Type A mode. Make a list. Knock things out. Make more lists. Knock more things out. That has even carried over into work for the blog. I was so focused on not being glued to the computer or being slave to the next blog post once I had Maddie I worked my tail off trying to get ahead.
I had blog posts written almost a month in advance. And believe me, trying to write that far in advance was hard and felt very mundane. I found myself just writing about the food instead of what I love .. my life.. my loves and the things I’m learning.
I know a lot of you come here for the recipes. But some come because they feel a personal connection. That’s what I love about blogging. You may never have met the person but you somehow feel like you know them or that you’re a part of a little sliver of their life.
I found healing through writing the struggles we’ve gone through and I know some have found healing or encouragement through reading it.
As I go through the comments you leave and hear you talk about the post itself instead of just the recipe it makes my heart sing. That’s where I come alive.
All that to say I’m sorry for being boring the past couple of months. I think the baby fog has lifted and my passions are starting to come back to the surface again. Woohoo! Or maybe it’s just the warmer weather, who knows. Either way, I promise to make things interesting again.
Starting with these Almond Butter Vegan Brownies!
GAH!!! Guys! These brownies are seriously the fudgest (is that a word? I’m getting a spell check error.. whatever we’ll go with it) most chocolate-y brownie you’ll ever have!
There is no flour and no egg! Yup! I know!
When I gave these to my small group to taste and told them what’s “not in it” one of the guys looked at me and said… “um.. so what’s in it?” Then he proceeded to give me the stink eye!
Well, there’s almond butter, almond flour, coconut sugar, apple sauce, cocoa powder, honey and extra dark chocolate chips.
That guy did end up trying these brownies after he saw the reaction of everybody else when they tried it! And he loved it!
These Almond Butter Vegan Brownies are not overly sweet (which is actually what I love). They have a slight nutty taste from the almond butter and flour, but the almond butter and honey give it that moist fudgy texture everybody loves in their brownie. (or at least the smart people like in their brownie … hehe)
I loved them fresh out of the oven because the chocolate chips are still gooey. But honestly they are good warm or room temperature. Top them with a scoop of vanilla coconut milk ice cream for a extra punch of deliciousness.

Description
Almond Butter Vegan Brownies – the ultimate fudgy brownie that’s insanely easy to make and loaded with intense chocolate flavor! I guarantee these super moist paleo brownies will be a hit with the fam!
Ingredients
- 1/2 cup almond butter
- 1/2 cup blanched almond flour
- 1/3 cup cocoa powder
- 1/4 cup unsweetened almond milk
- 1/4 cup unsweetened applesauce
- 2 tablespoons coconut sugar
- 2 tablespoons honey (use agave or maple syrup for vegan)
- 1 1/2 teaspoons baking soda
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/3 cup extra dark chocolate chips (60-70% cacao)
Instructions
- Preheat oven to 350 degrees F.
- Line an 8×8 baking pan with parchment paper. (leave an overhang on the sides so it’s easier to remove the brownies when done baking.
- To a medium bowl add almond flour, cocoa powder, coconut sugar, baking soda and salt. Whisk together. Set aside.
- To a small bowl add almond butter, almond milk, apple sauce, honey and vanilla extract. Whisk together.
- Add wet ingredients to the dry ingredients. Using a spatula mix everything together. Fold in the dark chocolate chips.
- Pour the almond brownie batter to prepared baking dish.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Optional: serve with coconut milk vanilla ice cream.
