Description
This moist cinnamon-spiced apple bread recipe with crunchy pecans is perfect for fall and it’s freezer-friendly.

- 1Â 1/2 cups all purpose flour or 00 flour
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 1/2 teaspoon all spice
- 1/4 teaspoon ground cloves
- 2 large eggs
- 1/4 cup coconut oil, melted
- 1/4 cup applesauce
- 1 teaspoon vanilla
- 3/4 cup sugar
- 1 1/2 cups diced granny smith apples, skin removed
- 1/4 cup of pecans pieces finely diced)
Instructions
- Preheat the oven to 350°F.
- Spray an 8×4 loaf pan with cooking spray and set aside.
- To a small bowl, add the apples and mix with 1/2 teaspoons cinnamon.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, remaining cinnamon, all spice, and cloves. Set aside.
- In the bowl of a stand mixer with the whisk attachment, add the eggs and beat on medium until they are scrambled. Next, add in oil, applesauce, and vanilla extract. Continue to mix until it is smooth and combined. Now, add in the sugar and mix until well combined.
- Slowly add in the dry ingredients and mix until flour is barely combined.
- Remove bowl from the stand mixer and gently fold in the apple chunks and pecan pieces. Pour batter into prepared loaf pan.
- Bake for 50-55 minutes, or until loaf is golden and a toothpick comes out clean.
- Cool bread in pan for 10 minutes. Enjoy!
