Description

These Apple Cinnamon Crepes with Maple Mascarpone make a delicious breakfast filled with warm apple cinnamon flavor. They’re so easy to make and they taste fantastic!


Ingredients

Cinnamon Crepes:

  • 1/2 cup of all-purpose flour
  • 1 tablespoon butter, melted
  • 1/4 teaspoon of salt
  • 1/8 teaspoon of cinnamon
  • 2/3 cup of 2% milk
  • 2 eggs

Apple Cinnamon Topping:

  • 2 granny smith apples, peeled & diced
  • 1 tablespoon of butter,
  • 2 tablespoons of brown sugar
  • 1 teaspoon of cinnamon

Mascarpone Topping:

  • 8 oz. of mascarpone cheese
  • 1 tablespoon of maple syrup
  • 1 tablespoon of honey
  • 1 teaspoon of vanilla extract

Instructions

  1. In a blender combine flour, melted butter, salt, cinnamon, 2% milk, and eggs.
  2. Mix in a blender until flour just combined and batter is smooth {about 1 minute}. There should be no lumps. Place in refrigerator for 30 minutes to let the batter set.
  3. In a large saute pan, heated over medium high heat, add butter, apples, and brown sugar.
  4. Saute for 2-3 minutes then add cinnamon. Mix until combined and saute for another 2-3 minutes until apples are just starting to get tender.
  5. Remove from heat and set aside. In a small bowl, combine mascarpone cheese, Maple syrup, honey, and vanilla. Gently mix to incorporate all ingredients.
  6. Heat a large non-stick saute pan to medium high heat. Spray with cooking spray or rub with butter. Then, with pan on a tilt, pour 1/4 cup of crepe batter into the middle of the pan. Rotate to make sure crepe batter spreads across entire pan. Flip crepe using fingers or spatula after 2-3 minutes. {or the bottom is just slightly browned}
  7. Cook the other side for another minute. Fold the crepe in half once, and then in half again. Place on plate.
  8. Continue to do the same steps until all crepes are made.
