No Bake Pumpkin Spice Energy Balls

These Pumpkin Spice Energy Balls are loaded with nutrients from ground flax seeds, pumpkin puree, chia seeds, oats and protein powder. Then they are naturally sweetened with dates for one epic healthy bite. Oh and I teach you my trick to ensuring that those energy balls stay together and don’t fall apart!

Ingredients you’ll need for this Recipe:

Most, if not all the ingredients for these Pumpkin Spice Energy Balls are in your pantry. Here are the items you’ll need:

  • Regular Oats: I buy Bob’s Red Mill Gluten Free Oats. You’ll want to make sure they aren’t quick cooking oats or steel cut oats.
  • Ground Flax Seed: To add some extra protein, fiber and omega-3s to our energy bites.
  • Chia Seeds: Another powerhouse of nutrients, aka a superfood, a little goes a long way!
  • Dates: These are the “sweetener” in our energy balls and also what helps make them “sticky” so they hold together in a ball.
  • Almond Butter: Most of the energy bites I use peanut butter, but with these I wanted the pumpkin flavor to come through so almond butter was the next easy sub to add protein and give a “creamy” factor to these balls. My favorite brand is Maranatha almond butter.
  • Pumpkin Puree: Use the organic kind and also make sure it has nothing added to it.
  • Protein Powder: I use vanilla protein powder which pairs perfectly with these pumpkin spice balls to add the slight hint of vanilla it needs. My favorite brand is Vega Vanilla + Greens Protein Powder
  • Pumpkin Pie Spice: This spice is a combine of cinnamon, ginger, clove and nutmeg (sometimes allspice) and is key to giving these balls that pumpkin spice flavor.
  • Water: I know this sounds odd, but trust me it works. I use this method is all my energy balls, it helps make the balls stick and stay together.

What is Pumpkin Spice?

Pumpkin Spice is a blend of cinnamon, nutmeg, ginger and cloves. Basically all the spices you use to flavor pumpkin pie with. 

How to make Pumpkin Spice Energy Balls?

The best part about these pumpkin spice energy balls is that they are made in a food processor! No mixing by hand. Just add everything to the blender or food processor, pulse it and call it a day! Here’s how to make them:

  1. To a food processor add oats, dates, flax, chia seeds, almond butter, pumpkin puree, protein powder and pumpkin pie spice. Pulse until the dates are finely diced and the mixture starts to stick together.
  2. Pour in 1/4 cup of water and pulse some more. You want the mixture to be sticky enough to form balls.
  3. Add pumpkin mixture to a medium bowl. (optional:Add in cranberries, fold together.)
  4. Form into small 1″ balls and place on a baking sheet lined with parchment paper.
  5. Cover and place in refrigerator for 2 hours

How to store Energy Balls?

Even though there is no dairy used in this recipe I store all my energy bites in the refrigerator. I find that they keep longer and I like the slight chill they have from the refrigerator.

How long will Energy Balls keep?

If stored in an air tight container or storage bag in the refrigerator, they will keep up to 5-7 days.

Energy Ball Variations:

There are all sorts of ways that you can customize this energy bites recipe, so feel free to get creative!  For example, you are welcome to…

  • Turn them into energy bars: Press the mixture firmly into a parchment-lined 8×8-inch baking pan, chill, and then slice into energy bars (instead of rolling the mixture into energy balls).
  • Use Maple Syrup: If you like your energy ball a little sweeter, sub the dates for 1/3 cup of maple syrup.
  • Make them Chocolate: To make them more dessert-y we like to add mini chocolate chips to theses energy balls.
  • More Nuts: Add some chopped pecans to these bites for extra protein, fiber and a little more “crunch”.
  • Use different nut or seed butters: I use almond butter in this recipe because it has a milder taste than peanut butter, but you could also use Use cashew butter, sunflower seed butter or any other nut butter.

Ingredients

  • 2 cups of gluten free rolled oats
  • 1/4 cup of ground flax seed
  • 1 tablespoon of chia seeds
  • 1/2 cup of dry dates
  • 1/4 cup of almond butter
  • 3/4 cup of pumpkin puree
  • 1 scoop of vanilla protein powder
  • 2 1/2 teaspoon of pumpkin pie spice
  • 1/4 cup water
  • (optional:) 1/3 cup of dried cranberries

Instructions

  1. To a food processor add oats, dates, flax, chia seeds, almond butter, pumpkin puree, protein powder and pumpkin pie spice. Pulse until the dates are finely diced and the mixture starts to stick together.
