Why Smooth Bowls are my Favorite

Ahhhh … deep sigh of relief!

I cannot even describe to you how excited I am to get out of the holiday season recipes filled with comfort foods and desserts. Back to my normal routine of healthy family meals, post work out snacks, and breakfast recipes. Whew! For whatever reason it is harder for me to come up with those recipes, now I’m back in “my jam” and ohhh so happy!

On a personal level I’m excited that it is January! A Fresh Slate. Newness. New Goals. New Travels. New Adventures. New Memories! And a New Planner. (hehe)

I’ll be even more excited when I’m back home and can get back to my workout routine. The past few months I’ve felt like a big blob. I was use to working out 4-5 times a week. But when we started the IVF process in November, everything had to stop. And I mean everything. Then December hit, sickness reared it’s ugly head, travels began, and workouts still didn’t happen. Perfect timing to not workout, right? Right around the holidays when holiday treats are around every corner. I think I had one week in December where I worked out 3 times. Woohoo.

I honestly feel like I’m getting a little belly. Even though, it’s probably not true. But when you work out, those feelings just go away. Ya know? So back to the gym and regular healthy meals for me! And I honestly couldn’t be more excited. I haven’t felt like myself the past two months! Yeah for January!

And on that note! Our first recipe of the NEW year is this Banana Berry Smoothie Bowl.

Guys. Have you tried Smoothie Bowls before?

I have to admit. I was a Smoothie Bowl virgin before this. I mean the idea of pouring a smoothie into a bowl and eating it like soup instead of just drinking it? You gotta admit, kinda weird right?

And I felt weird after the first bite, but you guys it’s so good. And as a texture person I appreciated that there were different bites and flavors in my smoothie. It’s kinda like eating cold soup, or a fruit gazpacho. De-licious!

Plus, it’s a great way to sneak in a handful of spinach or kale .. some protein powder and whatever else you can throw in there without realizing it.

Description

This healthy smoothie bowl is a refreshing way to add protein, fiber, fruits, and veggies to your breakfast. Plus, you can easily customize the toppings!


Ingredients

Scale
  • 1/2 cup unsweetened vanilla almond milk
  • 1 handful of spinach (about 11 1/2 cups)
  • 1 1/2 cups frozen berries
  • 1 banana
  • 1 scoop of vanilla protein powder
  • toppings: coconut flakes, chia seeds, banana slices, kiwi slices, raspberries, blackberries (anything you want really)

Instructions

  1. To a blender add, almond milk, spinach, frozen berries, banana, and protein powder. Blend until smooth.
  2. Pour into a bowl and top with whatever toppings you prefer.
  3. Enjoy!
