As I write this, I’m still pregnant. Some of the posts while posting on certain days, were written a couple weeks ago. So right now I’m 38 weeks and struggling y’all.
Physically I’m fine. I feel great. Usually in the evenings I start to feel uncomfortable but it’s the end of the day so that’s normal. Emotionally I’m a hot mess. I feel like I could break down and start crying at anything. Part of that is just because I want to meet our sweet baby girl. (see… even as I type that, I started crying… ughh.. HOT MESS!)
Waiting. Guys. I don’t like waiting. I feel like I’m a pretty patience person. But I’m done waiting.
We’ve waited 4 years to get pregnant. And then another 38 weeks so far to meet this little girl. I just want to hold her. To kiss her. God’s physical promise to us in my arms.
Ugh… come on baby girl. We are ready to meet you already!
Ok. I need to stop. I’m in the middle of a restaurant right now crying. Um. Embarrassing. People are probably thinking what’s up with the pregnant lady crying. haha.
Let’s focus on food shall we?
That won’t make me cry! Although, it may make you tear up because it’s so stinkin delicious!
When I am faced with the decision of what pizza to get, I usually lean towards 4 flavors.
Thai Chicken. BBQ Chicken. Buffalo Chicken. Veggie.
I’m not a marinara sauce pizza kinda girl. Marinara sauce is for pasta in my mind. When I’m making pizza I like to get creative and add a bunch of flavors to it. It’s literally a blank canvas that you can put anything on, why just be plain Jane about it?
You can even get creative with the “crust” portion of the pizza. I’ve made cauliflower crust pizza (which is delicious), zucchini boats, cauliflower steaks and even spaghetti squash. These are all great low carb options for pizza that allow you to get the flavor of pizza but not all the calories and carbs. You’ll love it! Even my 5 year old does.
Well, I should say that when he looks at it coming out of the oven he gives me a stink face. But when he tries it, he always likes it. Sometimes being a mom means hiding the vehicle of food from your kids because you know they’ll like the finished product. Just mash it up and I guarantee they can’t resist!
This BBQ Chicken Pizza Stuffed Spaghetti Squash are filled with sweet tangy BBQ sauce, tender chicken for some added protein (and I even used rotisserie chicken for a short cut), just the right amount of cheese to give you that gooey cheese appeal and as few or as many veggies as you like. Sometimes I like to add diced tomatoes and red pepper to the top, but for this one I just did red onions.

Description
This easy low-carb BBQ Chicken Pizza Stuffed Spaghetti Squash has all your favorite barbecue chicken pizza flavors in a healthier form!
Ingredients
- 1 spaghetti squash
- 1 tablespoon olive oil
- 1 cup Stubbs BBQ Sauce
- 1 cup cubed rotisserie chicken
- 1 cup shredded mozzarella cheese
- 1/4 cup sliced red onion
- optional: garnish with fresh basil
Instructions
- Preheat oven to 400 degrees.
- Cut spaghetti squash in half. Scoop on the seeds. Drizzle with 1 tablespoon of olive oil and rub into the squash. Place squash cut side down on a baking sheet.
- Bake for 35-40 minutes, or until the squash is tender when poked with a fork.
- Remove from oven. Using a fork gently scrap the squash into spaghetti strands.
- Preheat oven to HIGH broiler.
- Top each spaghetti squash half with 1/2 cup BBQ Sauce, 1/2 cup shredded mozzarella cheese, 1/2 cup rotisserie chicken and sliced red onion.
- Place in broiler for 5-6 minutes, or until the cheese is melted and slightly browned.
- Garnish with sliced fresh basil and serve.
