So, if you follow me on Instagram you’ve been waiting for this recipe for a while. I teased you with it about 2 weeks ago and you told me it’s a MUST have for Cinco de Mayo. Honestly, you’re right, it is! In fact, I’m making it for our Cinco de Mayo party. There’s so much flavor packed into this tender meat you won’t know what else to do with it but devour every last bite.
The meat can be served on a salad, in a taco or in a burrito bowl. It’s totally your choice. Whatever you decide, just choose to make it soon because it will be a dinner time game changer and it’s easy to meal prep!
One of My Favorite Flank Steak Recipes
One of my favorite ways to eat flank steak is with this Mexican inspired marinade. Essentially, the marinade is a chimichurri sauce. But the acid from the lime and red wine vinegar really helps tenderize the meat ensuring that when it’s time to grill you’ll end up with one amazing steak! I usually reserve a little bit of the marinade so I can top the steak with it to enhance the flavor even more when I’m ready to eat!
Trust me. This is one of the BEST ways to eat flank steak and it’s perfect since Cinco de Mayo is right around the corner!
How long can you marinade flank steak?
The key to a tender steak, especially when using a “tougher” cut of meat like skirt, hanger or flank steak is marinading it. The marinade will typically tenderize the meat and make it not as “chewy” to eat. I recommend marinating for at least 1 hour but up to 24 hours for maximum flavor and tenderness.
How to grill Flank Steak?
Will you believe one of the most asked questions is “how to grill flank steak like bobby flay? I thought that was so funny. Anyhow, here’s the best way to grill a flank steak:
- Heat grill to medium high heat, about 375-400 degrees F.
- Place flank steak on the grill and grill each side for 4-5 minutes for medium rare.
- Remove from the grill and let rest for 5-10 minutes to let the juices redistribute.
- Thinly slice steak against the grain of the meat.
- Top with chimichurri sauce and serve. (recipe below)

Ingredients
- 1 lb. tenderized flank steak
Marinade:
- 1 garlic clove
- 1 cup fresh cilantro
- 2 tablespoon red wine vinegar
- 1 tablespoon lime juice
- 3 tablespoons olive oil
- ¼ teaspoon smoked paprika
- 1/4 teaspoon cumin
- ½ teaspoon red pepper flakes
- salt & pepper to taste
Instructions
- To a small food processor add garlic clove, fresh cilantro, red wine vinegar, lime juice, olive oil, smoked paprika, cumin, red pepper flakes, salt, and pepper to taste. Blend until cilantro is finely diced.
- Add flank steak to a large ziplock bag or medium bowl. Pour 3/4 of marinade over steak, reserve remaining marinade for later. Move steak around to cover in marinade. Let sit for 1 hour or overnight (for best results)
- Heat grill to medium high heat, about 375-400 degrees F.
- Spray grill grates with cooking spray or rub down with oil soaked rag.
- Place marinaded flank steak on grill. Grill each side for 4-5 minutes.
- Remove from grill and let rest for 5 minutes to let the juices redistribute.
- Slice and serve with remaining marinade.
