Blackened Mahi Mahi Fish Burger
I cannot believe that 4 years ago today I was heading to the hospital to have our first child! I had no idea what was in store and to be honest I was a little freaked out! Not about the birth, more about the aftermath.
Someone was going to let me take care of a human!
It’s amazing to me how God builds that innate ability to be a mother into each and every woman! I had never babysat before, never changed a diaper, and the reason we waited 5 years to have a baby was because of me. But as soon as they put my 10 lbs. 2 oz. baby on my chest I was overcome with love! I knew what to do and didn’t all at the same time.
Breastfeeding came pretty easy, which was a blessing, and he was an eater for sure! He’s always been in the 95th percentage in both height and weight since he was born. Definitely takes after his daddy who is 6’5″!
I can remember waking up in the middle of the night to feed him and not caring about sleep because I got to hold him and stroke his sweet head.
Today I spent the day looking at all the pictures of him growing up on my phone and just starting crying. What a blessing he has been in our life. Sure there are days that are hard and I wish I had a little more patience, but being his mother is the greatist honor of my life!!
He has a constant curiosity for the life that’s going on around him. He is adventurous but cautious when he needs to be. He is endlessly silly. For real, this kid will dress up in the craziest outfits for the most random reasons, but other times he’s very adamant about matching his shirt and underwear.
He is a worshipper and loves to sing! There are times when I’m driving in the car and he will start singing along to a worship song with his hands raised in the air. He is so tender hearted, when someone else is in pain he hurts for them and wants to help them. He wants to make sure everyone feels included. He loves to play rough with daddy and copy everything daddy does, but will slow down to read books or cook in the kitchen. He is full of faith, this past year he has been praying with me for another little brother or sister and even comes up with names!
He is a lover, a warrior, smart, hilarious, full of joy, creative … and all MINE! And I’m going to soak up every minute of life with him! Happy Birthday to my sweet baby boy! Love you to the moon and back!

Keeping along with the grilling theme I thought a lighter burger recipe was appropriate; and you are gonna fall in love with this Blackened Mahi Mahi Fish Burger!
The spices coated on the Mahi Mahi itself have the perfect amount of heat and those spices are seared into the fish while on the grill. To compliment the spice I grilled a pineapple for a little sweetness, then added some lettuce for greens and a slight spicy sweet Piquillo Pepper Aioli. But the kicker and something I always do for every burger or sandwich I make is toast the bun on the grill. It’s a small thing but definitely brings any dish up one more notch!

Description
A burger you can sink your teeth into! This Blackened Mahi Mahi Fish Burger is topped with grilled pineapple and sweet spicy Piquillo Pepper Aioli, and it only takes 15 minutes to make!
Ingredients
Blackened Mahi Mahi Fish Burger:
- 4 4-5 oz. filets Mahi Mahi, skin removed
- 1 tablespoon cajun seasoning blend
- 1/2 teaspoon garlic powder
Piquillo Pepper Aioli:
- 2 roasted piquillo peppers
- 1/4 cup mayo
- 1/4 garlic powder
- 2 teaspoons fresh lime juice
- dash of hot sauce
- pinch of salt
Burger:
- 4 thick slices of fresh pineapple
- 8 leafs of green leaf lettuce
- 4 whole wheat buns
- pickled onions {optional}
Instructions
- Heat grill to medium high heat.
- To a food processor add piquillo peppers, mayo, garlic powder, dash of hot sauce, fresh lime juice, salt. Set aside.
- To a small bowl add cajun season and garlic powder, mix and set aside.
- Pat Mahi Mahi filets dry.
- Season both sides of Mahi Mahi with cajun seasoning mix.
- Spray the grill grates with PAM cooking spray or rub down with olive oil. Place pineapple and mahi mahi on the grill. Grill each side of the pineapple for 4-5 minutes while grilling each side of the mahi mahi for 3-4 minutes. (if you are trying to flip the fish and it sticks, let it sit another minute before flipping) Remove from grill and let cool.
- While those are cooling, through the buns on the grill, inside part down first. Grill for 1-2 minutes. Remove.
- Assemble the Burgers: Bottom bun, 2 leaves of lettuce, mahi mahi, pineapple {optionalpickled onions}, spread aioli on top bun and serve!
