You know the weekends that are overflowing with fun and memories that you will never forget?

That was this weekend!

Our weekend started on Thursday night this week because Mike had Friday off. We decided to have our first ever family Pizza and Movie night, we headed over to Best Buy to pick up a movie, the movie of choice was Mr Peabody and Sherman. We headed home, put together our homemade pizzas and piled on the couch to watch the movie. Cason was so enamored by the movie that he barely ate his pizza. About halfway through the movie he realized that he was still hungry so we made a bag of popcorn and the kid WENT TO TOWN on that bowl of popcorn. It was cracking Mike and I up, it was like we hadn’t fed the kid for days!

The next day we went to the park together as a family, fed the ducks and Cason climbed a rock wall all by himself for the first time. We went to Cason’s swim lessons, together, and then headed home for some family yard work. With all the rain we’ve been getting lately the weeds in our yard have started to outshine the plants and that needed to change asap!

For the 4th of July we woke up late and ended up rushing out the door to make the Independence Day Parade. Luckily we were able to find a good spot to “set up shop” for the next two hours of the parade. After the parade we headed home for a little down time and then back out again to a friends house for some pool time and bbq! We had lots of fun watching Cason show us all the things he learned at swim lessons and great conversation over food and wine while enjoying the somewhat cool weather of Texas in July.  We finished the night by sitting on Mike’s tailgate in our pj’s watching our neighbors set off fireworks. Our street is crazy when it comes to fireworks, it looks like a war zone the next morning so why not stay up late and watch all the fun!

As I’m remembering all the fun we had this weekend it just makes my heart happy. I love making memories like that. Slowing down in life and just enjoying each other. Why we don’t do that more often I don’t know. But I know I want to make it more of a regular thing! To be intentional about making memories instead of getting caught up in the next “thing” to check off our list.

Something else that makes me happy is this Cajun Mahi Mahi topped with a fresh Mango Pineapple Salsa!

Why This Mahi Mahi Recipe Makes Me Happy

Why does it make me happy? Well, first off it reminds me of the awesome vacation we just took to St. Lucia.

But it is also insanely delicious and takes you to the Caribbean with the incredibly fresh flavors! This Cajun Mahi Mahi was pan seared because I really like the crispy exterior you can get on fish when you pan sear it instead of baking or grilling it. The Mango Pineapple Salsa is slightly sweet from the fruit with a hint of tang from the lime juice, combined with the spicy Mahi Mahi the flavors are out of this world good. It is gluten free, guilt free, and only takes 15 minutes to make!

Cajun Mahi Mahi with Mango Pineapple Salsa

Description

This pan seared Cajun Mahi Mahi with Mango Pineapple Salsa is so fresh and delicious! It’s a gluten free recipe that’s easy to make in just 15 minutes!


Ingredients

Scale

Cajun Mahi Mahi:

  • 1.5lbs of fresh Mahi Mahi filets
  • 1 tablespoon of cajun spice seasoning
  • 1/2 tablespoon of garlic powder
  • 2 tablespoons of grape seed oil

Mango Pineapple Salsa:

  • 1 cup of fresh diced pineapple
  • 1 mango, finely diced
  • 1/4 cup of finely diced red onion
  • 1/4 cup of chopped fresh cilantro
  • juice of one lime (about 12 tablespoons)
  • salt to season

Instructions

  1. In a small bowl add pineapple, mango, red onion, fresh cilantro, lime juice, and salt to taste. Stir to mix everything together and set aside.
  2. In a small bowl add cajun spice seasoning and garlic powder. Mix.
  3. Pat Mahi Mahi filets dry.
  4. Season both sides of Mahi Mahi with cajun seasoning mix.
  5. Heat a large skillet to medium high heat, add grape seed oil.
  6. Place Mahi Mahi in pan and sear for 2-3 minutes per side.
  7. Remove and let sit for 1 minute to cool.
  8. Serve Mahi Mahi with Mango Pineapple Salsa

  2. This is a great base recipe to play with. We had most ingredients on hand and winged it with the rest – chutney ingredients are pretty flexible. It also worked well for the sensitive diet people- gluten free, dairy free, alpha-gal free. And FAST af if you thaw fish beforehand.

    I have almost no time to cook so this recipe is much appreciated as it is fairly brief in ingredients and easy enough for a novice to get right the first time. I use frozen mahi mahi from Nature’s Promise that I get at Stop n Shop so I feel good about the source and quality of the fish. I have learned what fish looks like if you don’t cook it all the way thoroughly vs when it is fully cooked and flaking. I love how I can make something this delicious and satisfying that quickly that isn’t a variation of my go-to pizza bagels. I highly recommend this recipe and fish is great for beginner cooks because it is so easy to cook.

    marinated the fish in pineapple juice, soy sauce and honey then salted and peppered, sautéd in butter 3 minutes on one side and 5 on the other-perfecto!

    I have been pinning many of your recipes for weeks. You are new to me have tried one and it was excellent Mexican Taco’s my husband loved them also. He is on a Keto diet so we eat around his needs, and my diabetic issues. I’m a very thin diabetic 100lbs 5’5. Love the heath aspects will adapt if I must. Most look prefect for us may add more heat, we love spice.
    So glad I found you.

  7. I made this last night. I will admit, I omitted the cilantro (I never use it in any recipes that call for it) but it was DELICIOUS! My husband cleaned his plate. Can’t wait to make it again!!!
