Description
This Italian-style caprese pizza recipe with melty mozzarella, roasted tomatoes, basil, and balsamic reduction is a great appetizer or quick dinner.
Ingredients

For the Roasted Tomatoes:
- 1 pint of grape tomatoes
- 2 tablespoons of olive oil
- salt
For the Pizzas:
- 2 pieces of stonefire artisian flatbread or naan bread
- 4 garlic cloves, minced
- 3 tablespoons of olive oil
- 8 oz. of fresh mozzarella cheese, sliced
- 1/4 cup of basil, roughly chopped
- Balsamic Reduction
Instructions
Roast Tomatoes:
- Preheat oven to 400ºF.
- Place tomatoes on a baking sheet and top with olive oil and salt.
- Bake for 20 minutes until tomatoes are roasted and burst.
Caprese Flatbreads:
- Reduce oven temperature to 350ºF.
- Place flatbreads on a baking sheet. Top each flatbread with olive oil. Evenly divide the minced garlic between the two pizzas.
- Top each flatbread with 4 oz. of freshly sliced mozzarella.
- Evenly distribute the roasted grape tomatoes on top of each flatbread.
- Place flatbreads in oven and bake for 10 minutes or until cheese is melted.
- Top each flatbread with fresh basil and drizzle with balsamic reduction.
