Cool Popsicles for the summer made with fresh bananas, melted dark chocolate, peanut butter, and topped with fresh coconut flakes!
Have you noticed all the yummy popsicle recipes out there lately? They are all over the place, especially on pinterest!
With how hot the summers get down here in Texas … and when I say hot … I mean hot!! Like you feel like you are walking out into a sauna as soon as you step outside with 100+ temperatures and then add in that good old houston humid = yuck & get me in the AC fast!
The only thing that will cool us down in the summer are cold tasty treats, and popsicles will do just the trick.
If you’re like me and don’t have one of those fancy popsicle makers, then just got au’ naturale with the most basic popsicle you can find. Aka the banana!
People make ice cream with it all the time, why not turn it into a popsicle?
I decided to sweeten up this Banana Popsicle even more but adding some melted dark chocolate swirled with creamy peanut butter and then dunked into a pile of unsweetened coconut flakes.
Holy party in your mouth!
This popsicles are to die for and are so stinking easy to make.
Cason and I had a VERY messy blast putting these Chocolate Peanut Butter Banana Popsicles together.
The best part is, there was a little bit of chocolate mixture left over. Unfortunately for me, my little man beat me too the punch and started to eat the chocolate without me!!! Little stinker! {although, smart kid, he knew he needed to act fast if he wanted some before mommy came back}
So, if you are looking for an easy dessert, something to you cool down, a chocolate fix for the evening, or just a way to use up those bananas then you NEED to try these Banana Popsicles. They are guaranteed to satisfy that sweet tooth! 🙂

- Prep Time: 10 mins
- Total Time: 10 mins
- Yield: 12 banana popsciles 1x

Ingredients
- 6 bananas, cut in half
- 10 oz. of dark chocolate chips, melted
- 1/4 cup of creamy natural peanut butter
- 1/2 cup of unsweetened coconut flakes
Instructions
- Slice bananas in half and put popsicle stick through the center.
- Melt chocolate and peanut butter together in the microwave. {I took me 2, 30 second session in the microwave}. Stir until smooth and creamy.
- In a small dish pour coconut flakes.
- Dunk your banana popsicles in dark chocolate mixture, making sure all sides of banana are covered.
- Next dunk tip of banana into the coconut flakes.
- Place finished popsicle on a parchment paper lined baking sheet.
- Continue this process till all popsicles are completely.
- Place baking sheet in the freezer until banana pops are frozen.
- Eat!

Can you imagine what it was like when there was no A/C? Like hell on earth. With no safe place to escape from the heat.
I’m so grateful we live in this era; with refrigerators, freezers, A/C, etc…

haha!!! Agreed! I seriously don’t even want to think about it. We dealt with no a/c for 2 weeks after the wreck from hurricane ike and it was miserable! If I had these popsicles I would have been a much friendlier person. 🙂

Gahh! I LOVE frozen banana popsicles! So so cold, icy and refreshing—-Multiply the delicious-ness by 1000 when you dip ’em in chocolate! These look amazing, Krista.
