Description
This zesty cilantro lime rice recipe with fragrant garlic and sautéed onions is an easy 20-minute side for weeknights.

- 1 tablespoon avocado oil
- 1 cup onion, chopped
- 1 garlic clove, minced
- 1 cup of minute jasmine rice
- 1 cup of chicken brothÂ
- 1 tablespoon lime zest
- juice of 1 lime
- 1/2 cup of fresh cilantro, chopped
Instructions
- Heat a large pot to medium-high heat. Add avocado oil and onions to pan. Saute until translucent, about 3-4 minutes, and then add garlic. Saute for 30 seconds.
- Stir in Jasmine Rice. Cook for 30 seconds and add in chicken stock.Â
- Bring to a boil and reduce to simmer for 5 minutes. Then remove from heat and let rest for 5 minutes.
- Fluff rice and stir in lime zest, lime juice and fresh cilantro.
- Serve.
