Description

These freshly-baked coconut chocolate chip oatmeal cookies with earthy cinnamon will be your new favorite cookie recipe.


Ingredients

  • 1/2 cup of unsalted butter, softened
  • 3/4 cup of brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1  cup of regular oats
  • 1 1/4 cup of all-purpose flour
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of baking powder
  • 1 teaspoon of cinnamon
  • pinch of salt
  • 1 cup of mini semi-sweet chocolate chips
  • 1/4 cup of unsweetened coconut

Instructions

  1. Preheat oven to 350°F.
  2. In a stand mixer, add softened butter and brown sugar. Beat until creamy.
  3. Add in egg and vanilla extract. Mix until combined, about 1 minute.
  4. Now, add in oats, all-purpose flour, baking soda, baking powder, cinnamon, and a pinch of salt. Mix until combined.
  5. Gently fold in chocolate chips and unsweetened coconut flakes.
  6. Scoop 2 tablespoons of the cookie batter on baking sheet and place 2 ” apart.
  7. Bake for 10 minutes. Serve!
