This 30-minute cottage cheese egg bites recipe with ham, Dijon, and sweet roasted peppers is an easy high protein on-the-go breakfast.

- 8Â eggs
- 1 cup cottage cheese
- 1 tablespoon dijon mustard
- ¼ teaspoon fine salt
- Pinch of black pepper
- 1/2 cup diced roasted red pepper
- 1/2 cup diced ham
- 1/4 cup fresh chives, diced
Instructions
- Preheat the oven to 350°F and lightly spray silicone muffin pan. Set aside.
- In a blender, place the eggs, cottage cheese, dijon mustard, salt, and pepper. Blend until smooth.
- Divide the egg mixture evenly among the egg cups. Evenly top with roasted red pepper, ham and chives.
- Bake for 18 to 22 minutes, or until the eggs are set. Let cool for 5 minutes before removing from the pan.
- Store the egg bites in an air tight container for up to 5 days.
