The month of June for us is mass craziness. The amount of celebrations we have in our family is unreal.
There is one anniversary, four birthdays (and another one on the way because my niece should be here any day now) and fathers day (which I have to do for 2 dads and a husband). Hallmark definitely cashes in on us that month! Mucho cards y’all.
With both sides of our family in town it has proven to be a little difficult at times to celebrate things.
Don’t get me wrong. I absolutely love having the family here. I love that my kids get to grow up with super involved grandparents. But on holidays sometimes it can be tricky.
Especially on a Mother’s Day or Father’s Day. Because you want to celebrate both of the parents, but then we are parents as well and would like to celebrate each other.
Does anyone else run into that problem?
Luckily the past year both sides have been pretty flexible about celebrating things “not on the day” so as to give the other side a time to celebrate on the day. If that makes sense.
I guess the idea being, it doesn’t matter what day it is. Just as long as we’re all together to celebrate.
My heart is to make both sides feel appreciated and loved and equally valued. But who knows. You do what you can, can’t worry about the rest. Am I right?
With this weekend being Father’s Day I really wanted to make Mike feel special. He does a lot to help out around the house AND with the kids. I appreciate it so much.
He adores golf so I told him to find a few guys and play a round this weekend, which I think he is gonna do on Saturday. Then we’ll celebrate Father’s Day with both sides on Saturday (one for lunch and one for dinner) so that the next day Mike can relax. Which usually means chillin by the pool with his wife in a bikini bringing him drinks and grilling food. And because I know my husband that means STEAK is a must.
Men like meat … and a potato of some sort. I made these Crispy Baked Fries a while back and both Cason and Mike loved them. Especially the Roasted Garlic Aioli I made to dunk them in. Because every fry needs a tasty sidekick sauce. 🙂 These Baked Fries are definitely on the menu this weekend and would be perfect for your Fathers Day celebration as well.
After all if you’re grillin, which I’m sure you are they are perfect with Steak, Hamburgers, Brats or Ribs. So take the guessing out of which side to make and just whip up a batch of these easy Baked Fries.

Description
These Crispy Oven Baked Fries served with a Roasted Garlic Aioli make the perfect side dish for summer. These homemade french fries are baked instead of fried for a guilt free bite that can be served with anything!
Ingredients
Crispy Baked Fries:
- 5 yukon gold potatoes, cut into 1/2” strips
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon sea salt
- 1/2 teaspoon dry basil
- 1/2 teaspoon smoked paprika
Roasted Garlic Aioli:
- 1/2 cup mayo
- 1 tablespoon lemon juice
- 1 tablespoon prepared horseradish
- 1 whole bulb of roasted garlic (see notes on how to roast)
- salt & pepper to taste
Instructions
- Preheat oven to 400 degrees F.
- Add sliced potatoes to a large bowl of water, soak for 30 minutes.
- In the meantime, to a small bowl add mayo, lemon juice, prepared horseradish, roasted garlic, salt and pepper. Whisk to combine everything and set aside.
- Drain potatoes and pat down with paper towel so that the potatoes are dry.
- Add dry potatoes to a large bowl add olive oil and half the spice blend.
- Place potatoes in a single layer on a parchment paper lined baking sheet.
- Bake 30 minutes. Turning half way through.
- Remove from oven when they are slightly browned and crispy.
- Season with the remaining spice blend and toss the fries so they are all coated.
- Serve with roasted garlic aioli.
