Description
This Easy Broccoli Cheese Soup recipe is made in the crock pot & is healthy too! Your family is going to love it. A quick dinner idea with less than 10 ingredients and filled with cheesy goodness! The perfect comfort food for the fall.

- 2 cups cauliflower florets
- 4 cups broccoli florets
- 3 cups vegetable broth
- 3 garlic cloves, minced
- 4–5 sprigs of fresh thyme
- salt & pepper to season
- 1 cup 2% milk
- 8 oz. shredded cheddar cheese
Instructions
- To a crock pot, add cauliflower, broccoli, garlic cloves, fresh thyme, salt, pepper and vegetable broth. Stir to mix everything together.
- Cover and cook on HIGH for 2-3 hours.
- Add half of the mixture to a blender along with milk and puree until smooth. Pour the blended soup back into the crock pot with remaining mixture and add in the cheese. Using a wooden spoon, stir until the cheese is melted.
- Serve. (optional: garnish with a little cheese and chopped green onions)
