Description
This super easy Croissant Breakfast Casserole is the ultimate meal prep breakfast! Filled with ground sausage, sautéed onions, red peppers, cheese, fluffy eggs and flaky croissants for the perfect protein packed bite- just grab and go!

- 5 eggs
- 1 cup 2% milk
- 1 tablespoon dijon mustard
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lb. jimmy dean all natural ground sausage
- 1 tablespoon butter, unsalted
- 1 cup yellow onion, sliced
- 1/2 cup red pepper, diced
- 4 large croissants, torn
- garnish: green onions and parsley
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 350°F.
- To a medium bowl add eggs, milk, dijon mustard, garlic, salt and pepper. Whisk to combine and set aside.
- Heat a large skillet to medium high heat. Add the sausage to the pan and cook until browned, approximately 5-7 minutes, breaking the sausage up with a wooden spoon throughout the cooking process.
- Remove sausage from the pan and place on the bottom of a 13″x9″ baking dish.
- To the same hot skillet add butter and onions. Cook until onions are caramelized, about 5 minutes.
- Layer the onions over the sausage, spreading out evenly in the dish.
- Next, add red pepper and 1/2 cup of cheddar cheese.
- Pour the egg mixture over the sausage. Give the dish a gentle shake to make sure everything spreads evenly.
- Top with torn croissant pieces and finish with remaining cheese.
- Cover the baking dish with tinfoil and bake for 30 minutes. Remove the tinfoil and bake for an additional 5 -10 minutes. You want the inside mostly firm when you give the pan a quick jiggle test.
- Remove from oven and let rest for 5 minutes before serving.
- Garnish with green onions or parsley.
